the first restaurant, the owner's wife is the best, she does everything in the kitchen, with excellent wok skills not many women would be able to handle such wok frying all day, every day. My respect to the wife of the owner aka the chef.
She is so graceful when she cooks. The way she handles her wok, the ingredients, her every move is controlled its fascinating to watch her create yummy dishes.
Great video enjoy watching the cooks prepare the food. I have a question. What is that container that she pours a lot of ingredients onto the meals it’s not salt. Can’t be that much salt. But what is that?

"Chahan" (the Japanese variation on fried rice) uses Japanese short grain rice, which possesses different starch content levels compared to Chinese rice varieties and is therefore utilized freshly cooked. The resulting fried rice dish has a slightly sticky consistency.

The whole MSG causing headaches was a lie and the letter was written by an Orthopedic surgeon at the time. Hard to believe but Orthopedic medicine was once considered quackery and not published in journals. Two Orthopedic bros in Philadelphia loved to eat and drink at a Chinese restaurant near the hospital in Chinatown. One of them made a bet he could get published and they wagered a 100 bucks. So the one came up with an Asian sounding name and changed his specialty. Since he would get headaches from the beer and jasmine tea. Knowing they used MSG at every Chinese restaurant in the world. Decided to state the reason for these headaches was the MSG. Fabricated everything down to the patients and such for 100 bucks. MSG is naturally in a lot of foods and anyone who gets a headache is experiencing the placebo effect and nothing else.
This is a Chinese-style cuisine restaurant located in Japan. The Chinese who settled in Japan during the late 19th Century introduced their style of cooking. This developed into "Chūka Ryori" (Japanese-style Chinese food), which is a hybrid cuisine of Chinese and Japanese cooking. Ramen, Yakisoba, Chahan (Fried Rice), and Gyoza are notable examples of this cuisine style.

Most of the original Chinese restaurants in San Francisco were operated by Japanese people. Fortune cookies were Japanese tea cakes originally. They couldn't stay open offering Japanese food as people didn't find it appetizing. Most American Chinese food is Japanese style made by people from Taishanese. If not mistaken they make up the vast majority of Chinese Americans. They started every large Chinatown in America and Canada.

They were manufactured with equipment originally utilized for making Senbei rice crackers. During World War II, Chinese-Americans took over the businesses of interred Japanese-Americans, including shops that produced Fortune Cookies. This resulted in Fortune Cookies being commonly associated with Chinese-American culture.
