No Oven Easy Mango Caramel Custard - No Eggs No Gelatin No Bread Delicious Mango Pudding Recipe
This mango dessert is a big hit in my family. Though I used canned mango pulp as fresh ones are not readily available at my place, you can definitely use fresh mangoes but please choose very sweet and ripe mangoes for this recipe.

Ingredients required for making mango creme caramel - serves 6
For making caramel -
* 4 tablespoons sugar
* 2 tablespoons water
* 1 to 2 teaspoons lemon/lime juice (lemon juice prevent crystallization of sugar)
* 1 tablespoon hot water to be added as soon as caramel reaches the desired color.
For the custard -
* 1 cup full cream/whole milk. Using cold or room temperature milk is very important.
* 3/4 th of a cup of cream / heavy whipping cream. If you do not want to use cream then replace it with milk.
* 1/2 cup mango pulp. I used canned Ratnagiri Alphonso mango pulp. If using fresh mangoes then please use very sweet ripe mangoes. If mangoes are not sweet then there will be chances of the milk separating. Peel the mangoes and puree them in your blender. All you need is 1/2 a cup of mango puree.
* 1/2 cup sweetened condensed milk
* 4 tablespoons cornflour(cornstarch)
* just a tiny pinch of salt
* water for steaming
Steam for 45 to 50 minutes.
TIPS --
* Do not stir with a spoon while making the caramel
* Lower the heat to medium low as soon as you see the sugar starting to change color.
* Allow the caramel to cool down and harden fully before adding the custard to it.
* butter the container that you will be using
* Strain the custard
* Do not steam on very high heat. Use medium low heat.
* The custard should look set all around the sides. It is okay if you see the center bit jiggly even after 50 minutes as it is going to firm up once refrigerated. If you see your custard not set along the sides then steam for a few more minutes.
* keep in refrigerator overnight for best results.
