Eggplant with coconut (stir fry):
I love eggplant. I make a simple stir fry with coconut. You can use fresh coconut or frozen thawed coconut or unsweetened coconut flakes, While slicing the eggplant, I add the sliced eggplant to salt water until ready to cook. I drain the salt water from the eggplant right before stir frying.
Ingredients:
3 Japanese eggplants - sliced into 2 inch long slices.
1/3rd cup chopped cilantro
1 garlic clove chopped
1 tsp cumin seeds
3 tbsp fresh coconut or unsweetened coconut flakes
2 tbsp olive oil
1/2 tbsp salt
1/2 tsp turmeric
1 tsp chili powder
Here is what I did:
I took a medium pan and put it on the stove on medium heat
I added olive oil. I let the oil heat
I added cumin seeds and let them sizzle
I added garlic and let them brown a bit
I added eggplant and let this cook for 10-12 minutes. I sautéed in between
I added salt, turmeric and chili powder
I added coconut and cilantro
I sautéed everything for a couple of minutes
This is a delicious serving of vegetables
Enjoy with rice or roti
