I was never a big fan of eggplant in the past because I could not seem to get the bitterness out of it. This recipe looks like it would be delicious and not at all bitter! I will certainly have to try this. Thank you for sharing.

Great! You may use regular white rice instead of multigrain you want. Add little less water than just cooking regular rice. Hope you like it!🥰

I used 1 cup of white rice(short grain), quarter cup of brown rice, quarter cup Barley, and another half cup is a mixture of wild rice and sorghum. I soaked all the grains in water for an hour before cooking. If You use only white rice, you don’t have to do so.😀

Any pot that cooks rice should work. For normal pot, I recommend to use regular white rice, because multigrain could be too tough!

It's looks great! I always don't have idea about cooking an eggplant 🍆 I usually just cook the eggplant with balado recipe and it's boring sometimes :D

Hi Nasliya. I added soy sauce so salt is not a must ingredient for this dish. But you may combine soy sauce and salt. It's up to your taste!🙂

Sure, that sounds great. Just control the amount of water. I recommend to reduce a bit of water. : )

The eggplants is seasoned with some soy sauce and I eat this with kimchi. But you may serve it with a sauce at the side. In a small bowl combine 2 tablespoons soy sauce, 1 teaspoon 1 teaspoon water, and sesame oil. : )
