There are two cases to this. The integral security of the overall device and safety of your backups. Unfortunately, though not a security expert myself, do believe that the former is critically bad for all e-inks. The latter can be circumvented to a certain degree, should the device offer offloading to a personal physical drive or external cloud solution. As you had mentioned, there will always be inherit risk for online connectivity and offline measures would be the best bet should one's security tolerance be low.

This is a great topic, using the 3 different countries as use cases to determine the risk level. It makes a lot of sense to view this from the perspective of the risk tolerance allowed in the individual's circumstances. I guess this is the reason why I don't really feel the need to get into the Android ecosystem (through something like Boox) when I already have Apple devices. I've only started to use my new Supernote nomad A6X2 and I like how the device allows customisation on which folders to synchronised with the cloud service and which ones not. I get what you mean by the risks relating to AI sits in the back end.

So, a follow-up question: Would you feel comfortable using a device from your example Chinese company device in the same way you use your Supernote for work? Would you feel confident in its safety by turning all the syncing off, etc?

supernote is offline right? so it would be safer no matter what

That's how I use my Supernote. But you can have an account and upload notes to their cloud servers.

Yes. I think of Supernote as a Chinese company, although they do have split HQs. Prior to Supernote I had used the Boox Note Air at work, another Chinese company. In both cases, I'm good with using their devices under the right conditions, which is to say without leveraging any of the account or cloud services each provides.
