Parchment paper. If you wad the paper gently and lay it out as normal it will stay flat and will be non-stick as well.

do you buy in All Purpose form? regardless, once in AP form, is it completely interchangeable with regular AP flour, ie, can you use just like regular AP in all recipes?

I read the comments after-sorry. I would really like to use the whole germ of the flour for the nutrition. Do you know of a book that is mostly whole grain or how to incorporate it into a recipe?

Hey Wendy the only book I have on einkorn is really informative… it’s a cookbook by Carla Bartolucci. I sure hope this helps

Yes it is a really wet and sticky dough when you first mix it up. If you put it out on some parchment paper(easier cleanup) and continue to dust it in the einkorn flour incorporating a little more, it stops being so sticky and becomes a wonderfully soft dough. My husband is T2 diabetic. We control it with diet alone, which means very low carb. I have read that Einkorn flour doesn't cause the glucose spikes that modern wheat flour does. Has anyone had any experience with this? Thanks so much. God bless.

We are not diabetic, but we eat a low glycemic diet as a healthy lifestyle which is how we started eating einkorn….I have a very informative cookbook by Carla Bartolucci all about einkorn. She says that “einkorn contains roughly 30% more protein than modern wheat and more protein than any other grain while having 15% less starch, translating to fewer carbohydrates”…. I hope this helps. The cookbook is called Einkorn (recipes for nature’s original wheat)

I just read about sourdough starter and how it breaks down the gluten and any chemicals in the flour (not bleached flour tho, that will kill the sourdough ) you can even eat it in the fermentation stage of starter and it works to detoxify your body as well as serving as a probiotic. There’s lots on KZitem about it. You can put it into anything that calls for instant yeast which isn’t really yeast at all but fungus and viruses. It was commissioned by the military for nestle’s to come up with a transferable “yeast”. My friend is a diabetic and found all this useful. I am not a diabetic but was pre until i started using these things as well as intermittent fasting. Hope that helps and doesn’t just confuse everything.

@@wendyshine8548 , Thanks for taking the time to reply. I have purchased sourdough bread made at an organic local small business. The bread was incredible...everything a loaf of true sourdough should be. We had such high hopes, but his blood glucose still experienced a huge spike.

new to Einkorn (thought I knew it all haha), can you buy in an AP version? ie, ready to go in any type of recipe? regardless of answer, once in the AP form, can this flour sub the same for every recipe?

I’m so glad to see your interest in Einkorn, it is such an amazing flour for so many reasons. It is an all purpose flour and yes I use it exactly as I would for any other flour. I got this book I am linking for you which not only gives so much information about the history of einkorn and the ins and outs of it, but it also has tons of good recipes. I hope you enjoy it. I just started researching it and boy its expensive, I am seeing $30 plus for a 10lb; appreciate your organic choices, I always appreciate videos when I see quality ingredients; I cringe when I see bottom of the barrel ingredients and it makes me not even want to watch

I usually purchase on Amazon because I have prime and so I don’t have to pay for shipping. You can get it from the jovial foods website but have to pay shipping, so it’s a toss up. It may only be the difference of a few dollars. You can usually find it in stores like Whole Foods, central market or natural grocers but it seems to be priced about the same as Amazon or jovial….. so, no, I haven’t found a cheaper source 😂

No not really, I think $5/lb with Azure (online) but you have to buy like 10 or 20 lbs at a time, and you have to be near a “drop” worth driving to. Vitacost or Thrive market when they have sales.

I use two knives it is faster. I was eating an einkorn biscuit watching this. One day try this use unflavored almond milk instead of milk and no egg and follow your recipe. Brush the tops with olive oil.
