I just made this, and I think I followed your instructions almost exactly. My bread is sort of squatty. The only thing I did different, I think, was that I let the dough rise on top of the oven as it was preheating. It got pretty hot, so I moved it but not until it had been sitting on it for 20 minutes or so. Could that be why it didn't rise much? Wish I could figure out how to send a picture.

When I was watching the recipe for Japanese souffles, the lady said if you leave it inside the pan, it collapses, but if you put the pan upside down the souffles won't sink. Then another video for actual einkorn bread had the lady taking out the bread from the pan while still hot and laying the bread on it's side so it doesn't sweat from the bottom and sink in. So I think that's how you can prevent it from sinking/collapsing

1 1/4 cups of hot water --115f 1 1/2 teaspoons of active dry yeast 2 tablespoons of sugar or honey Stir and let it sit dor 10 minutes
