This is a treat we allow ourselves once a year in spring, when the elder flowers are so abundant that we don't feel guilty for depriving the pollinators of a few flower heads.
A rather delicious treat that is easy to make.
Pick flowers at their prime. Do not wash, but shake out to remove possible insects, then lay out for a few minutes to allow insects to escape.
Prepare a tall pot with 2+ inches of neutral frying oil.
Batter recipe - enough for roughly 10 medium flower clusters.
2 eggs
1 cup milk
1/2 cup flour
1/8th teaspoon baking powder
dash of salt
Bring oil to 350F. Dip flower cluster in batter, so flowers are covered. Let drain off excess batter. Immediately drop into oil.
Fritter is done when bottom is gently browned.
Sprinkle with cinnamon/sugar and immediately serve with cold apple or pear sauce.
