Recipe:
2 medium boiled eggs ( medium eggs -7
minutes - Ig 9 minutes- XL -12 minutes) then plunged into iced water to chill for 5 minutes. Then peel. For presentation, slice eggs in half lengthways. Place on plate of choice cut side down. For sauce - Combine 3 T Ketchup of your choice (we use organic Hunt's) , 9 T mayo of your choice ( we make our own with a blend of avocado and extra virgin olive oil), a teaspoon Tabasco, a splash Cognac, 1T fresh lemon juice . Combine until well blended . This is enough for several servings. The rest can be kept refrigerated for up to a week.
Nap the top of eggs with the sauce, finely chop some red onions and scatter over the eggs and the plate, do the same with some drained capers and then add an optional anchovy filet over the top of each egg.
Lastly shower the plate with finely chopped fresh herbs such as parsley, chives, chervil and enjoy!
