Lets explore a root cellar that has some long term guests. Potatoes are my passion, there is no plant on this earth more versatile and better tasting. The deep green vines and light white and pink flowers are a delight every summer. After harvest they need to be stored to be used for almost a year!
The key to good storage is temperature control tightly at 8C, humidity control and air movement, letting the potatoes breath. Potatoes should be free of large clods of soil but not be washed to prevent spoilage.
If done properly you will start eating young potatoes, before last years potatoes are spoiled.
