How to make KOJI RICE strep by step the easy way. KOJI RICE is the name given to rice grown by the mould Aspergillus Oryzae (Koji Kin), without some specialities of Japanese cuisine wouldn't exist.
Like sake, rice vinegar, shio-koji and amazake. The spores of Aspergillus Oryzae are also needed to make soy sauce and miso.
