Hello!
Janchi guksu is a simple warm noodle dish
made with thin wheat noodles (somyeon)
that are usually in a clear anchovy broth!
It’s an easy comfort food that is enjoyed by many in Korea.And the thin white noodles represents long life so is usually served in a wedding ceremony.

Ingredients
240g Somyeon noodles
5C anchovy broth
50g onion, sliced
50g zucchini, sliced
40g carrots, sliced
2 eggs, making Jidan and sliced
clear soy sauce 1T, garlic,minced 1t, salt, cooking oil, seaweed, sesame seeds as needed
*Anchovy broth:
anchovy 100g , kelp(5x5cm) 3pieces, dried turnip 20g, dried red pepper 1ea, dried pollack head 1ea, leek 1/2sprig, onion 1/4ea, water 4L
*sauce: clear soy sauce 1t, fine red pepper powder 1/2t, garlic, minced 1t, leek 1sprig, hot green pepper 1ea, sesame seeds 1t
Preparation)
1. Making broth: Remove the guts out of the anchovy. Combine all the broth ingredients and cook for 40minutes to make broth.
2. Cook all the vegetables separately and season with salt as you cook each ingredient.
3. In a bowl, combine all the ingredients to create the sauce.
4. In anchovy broth, add garlic, clear soy sauce and serve cooked noodles and garnish with ingredients.
