Ingredients
1kg pork ribs, blood withdrawn, scored knife cuts
2T soybean paste(doenjang)
1/2 soju(rice wine)
600g(1/2head) well-aged kimchi
1 onion, cut into pieces
1sprig leek, green part cut into 6cm long, white part
sliced in a bias
3T garlic,minced
1/2C Kimchi liquid
1T fish sauce(anchovy sauce)
3 bay leaves
1 clove ginger, sliced thinly
1/2t black pepper
4C water
1/2T red pepper powder
Preparation
1. In a pot, put soybean paste and pre-cook the pork ribs; Rinse with soju.
2. In a wok, line with kimchi leaves and place pork ribs, bay leaves, leek(green parts), ginger, garlic, kimchi liquid, anchovy sauce and water; then cook for 30 minutes with a lid on.
3. Discard leek(green part), ginger, and bay leaves; Add red pepper powder, onion and leek to cook for another 10minutes; Season with black pepper.
