The secret of really good tarte flambée is the dough. After all, it makes up half of the tarte flambée. So don't skimp on the thin, crispy base. Sour cream, onions and bacon complete the original Flammkuchen as it’s called in german or Tarte Flambée in Alsace/France

5 g dry yeast
½ tsp sugar
75 g light rye flour (ash content 1.15 %)
225 g all purpose flour
2 tablespoons olive oil
Salt
200 g bacon in slices
4 red onions
200 g sour cream
Freshly ground pepper
