Today we're going to make flaky steamed buns from Yunnan, which does have a smooth look on the outside but have a lot to offer on the inside

Ingredients (for 10 buns):
- Flour (for dusting) 100ml
- Lard 3 tbsp
- Cake flour 500g
- Lukewarm water 300g
- Active dry yeast 3g
- Baking powder 2g
Ham and honey fillings:
- Dry-cured ham (prosciutto) 150g
- Flour 2 tbsp
- Honey 2 tbsp
- Sugar 2 tbsp
- Ground roasted peanuts 2 tbsp
Shiitake mushroom and pork fillings:
- Minced meat 100g
- Shiitake mushroom 5-8 pieces
- half Onion
- Sweet bean sauce 1 tbsp
- Soy sauce 1 tbsp
- Oyster sauce 1 tbsp

Steps
- First, let's make the ham and honey filling
- Cut a piece of ham (prosciutto) and steam it
- Stir fry 100ml flour on low heat and set aside
- Chop the steamed ham into small pieces
- Add 2 tbsp of cooked flour, 2 tbsp of ground peanuts, 2 tbsp of sugar and 2 tbsp of honey to the chopped ham
- Mix well and set aside
- Then make the shiitake mushroom and pork filling
- Chop the soaked shiitake mushrooms into small pieces
- Chop half onion into pieces
- Stir fry the minced meat, add the mushrooms and onions.
- Season with 1 tbsp of soy sauce, sweet bean sauce and oyster sauce
- Shiitake mushroom and pork filling is ready, set aside
- Let’s make the dough
- Mix 500g of cake flour with 2g of baking powder
- Mix 300g of lukewarm water with 3g of dry yeast
- Mix and knead to form a dough
- Let the dough rest for 10 minutes, and knead it until smooth
- Let the dough rise until double the size
- Roll out the dough into a rectangle, about 5 mm thick
- Grease with lard and sprinkle with cooked flour
- Roll up and cut into dough balls
- Tighten the ends of each piece, twist and press to form a wrap.
- Roll the edges of the dough thinly and wrap it with the filling
- Let rise again for 10 minutes then steam the buns on high heat for 15 minutes
- Turn off the heat, and don't remove the lid until the steam dissipates
- Flaky steamed buns are so yummy
