Does you need to grinding or polishing the surface before do the Engine Turning? Should the surface be flat at all?

The surface on this is 2B which is just plain flat rolled material - there is no need for any finishing first. It just needs to be clean and flat. You could leave the tool in contact longer if it was less perfect.
