I had to learn to make these when my oven broke and my landlord took 2 months to fix it. A tip for beginners; use a skillet with a lid to cook these. Do a test muffin first. With these muffins, they will release a lot of steam that gets trapped 8n the covered pan, which can help bake them without burning the bottoms. Also, putting some cornmeal under them as you shape and proof them can help you move them around and give you a beautiful crisp texture. Just brush excess cornmeal off after baking and cooling (if you can wait that long, lol!)

Of course, you CAN make southern-style "hoecakes" more quickly, since there's no yeast or proofing involved. And they're cooked (ideally), in a cast iron skillet on the stove top, over a campfire, etc. If you like, you can dust the outside with cornmeal before cooking.

They're sold as just "Muffins" here though, calling them "English muffins" does sound really American. I have them all the time. The Cheese and Black Pepper ones you get in Aldi (or Sainsburys) are amazing with butter and marmite.

DarkWinter8 It’s wonderful! I will warn you that many if not most of the breads require two or even three days to make. He is the father of cold fermentation and uses it a lot. So you have to make the “sponge” and let it rise overnight in the fridge.

@@pepperdayjackpac4521 it's a breakfast bread that you cook in the toaster, it has lots of tiny holes inside it going all the way through, created by carbon dioxide, forming an incredibly fluffy, chewy ocean sponge kind of texture. If you google a picture you'll see lots of holes on the top of a crumpet. Drown it in butter and you'll have a delicious breakfast. English muffins on the other hand are a much stodgier, heavy textured bread. Completely different in every way imo.

Maybe it's just me but crumpets also need a fair bit of toasting until they are crispy, otherwise they're a little too stogey & indigestible. Muffins pretty ok either way. But if done right, for me crumpets win.

Fun baking hack: proof your bread while you shower. Wrap them well and set them on the bathroom counter while you shower. The heat and steam will help the proof quicker.

Emmy, you're the only chef, baker, cook, etc., whom I've seen that uses the same whisking technique that I use, i.e., spinning the handle between your palms. It works SO much more quickly on both dry, and soft wet ingredients, (think soup mixes, gravies, etc.). I've never understood why it isn't more widely used?

Love English Muffins~ Been baking so much bread during this quarantine, so I cannot wait to try this one ^^ Also I have to look up that powdered buttermilk. I avoid recipes that need buttermilk cause other than that one recipe, I won't need it so the rest of the buttermilk ends up going to waste~

I looove english muffins. I always split them, slather on a hefty amount of butter on them and brown the buttered side on a griddle. They get so golden brown and delicious. Add any flavor fruit jam and 👌🏻👌🏻👌🏻 It's just not the same when you toast them in the toaster and add butter after!

If you tend to keep your house cooler (as my husband prefers) you can turn your oven on (I just set it 350) for about 10 to 15 seconds (just until you can feel that's it's slightly warm when you put your arm in) and let your dough rise in there.

I love English muffins! I am for sure going to try these. I have to check what flour I have left, I ran out of AP flour and none of the stores I've been to have had any. Oh just checked what I have; I have pastry, whole wheat flour, AND whole wheat BREAD FLOUR!! I will make due, I think I'm making some bread also. Now I want some fresh warm bread and English muffins!

I use that powder all the time but I do not reconstitute it I just add it into the dry ingredients. It gives that tart buttermilk taste and my cakes rise so beautifully with a lovely crumb! Tender and moist... oooh yummy! Try it in biscuts and buttermilk pound cake recipes...

*CRUMPETS are totally different to english muffins, Cumpets are full of holes that let the melted butter ooze through the crumpet, they're also harder & chewier they're delicious hot buttered with Golden Syrup, jam or honey on them, you can get thin ones called piklets that are a bit like American pancakes only with a crumpet holey top. Muffins (the UK type) are more like a dense bread roll, a bit but not a lot like a bagel*

@@markv7924It an English thing, over here everyone knows what it is. it's a sugar syrup, used in baking, pancake topping, on toast, on crumpets, in poridge. It's like a fake honey. Otherwise known as (but wrongly) treacle. Emmy used it on one of her vids & explaned what it was, but I cannot remember which video it was. But the proper stuff by tate & lyle is bloody yummy, oh and would you believe it's golden in colour😁 en.m.wikipedia.org/wiki/Golden_syrup

My Nonna would sprinkle to top and bottoms with either semolina or farina before cooking. I’ve never had them any other way. In the UK the McDonald’s the sausage McMuffin muffin had either semolina or farina sprinkled on the top and bottom. Also to add a English muffin is nothing like a crumpet, well at least here on the UK they’re not. Crumpets are special and so delicious with a nice salty butter on.

I have been baking bread and buns in the slowcooker since the lockdown. Works like a charm. Next up - slowcooker cake for birthday boy on Sunday.

This is my favorite English muffin recipe and I have made it a lot! When I put mine on the griddle, I like to put them on domed (or risen) side first because I find that they look more uniform that way. Yummy.

English muffins are actually very different to crumpets. I'd love to see a follow up where Emmy tries to make crumpets. They're great warm with butter and marmite!
