Love this lecture and have been watching/listening to your others. But I want to add my two cents to clarify something as a horticulturist. Organic does not mean pesticide free. It just means they use naturally derived insecticides which depending on the pesticide it can have the exact same chemical composition. It is just natural vs synthetic. There are growers that refuse all pesticides (Natrualist or synthetic) for biological control organisms. There are companies that focus on that now like, selling nematodes that feed on thrip larva or selling those parasitic wasps for caterpillar control.

Also a vegetable or fruits taste and shape is variety dependent not on whether it is grown organically. It is just that organic food growers are generally selling directly to the customers and are not having to worry as much about shelf life of the fruit or vegetable. So they can let it reach a more ripe state before harvesting and selling. Also they have a bit more options for variety selection since they are able to be a little more flexible in the business model. They generally are not doing monocultures of one thing. Some are but most are smaller family owned organic farms where they polyculture. So if they have crop failure for one part of their farm, they have something else to fall back on.
