Lovely day back at culinary school trying the Taste of Patisserie short course at Le Cordon Bleu London.
This "course" is a one day (6 hour) class designed to give you taste of what it's like to do the Patisserie diploma.
In your pack you get an apron, tea towel, all the recipes covered in the class, a pen and a hot drink voucher for the cafe.
All the elements you learn contribute to a final product which in my case was a Frasier.
For this we made a genoise sponge and a creme patissiere converted it into a creme mousseline to fill it.
We also made the simple syrup to soak the sponge and a marzipan rose to go on top.
We got the recipe for the royal icing to decorate but it was pre-made for us as was the piping cornet used to decorate.
We also learnt how to make a chocolate fondant which we take home to bake.
We got to try plating the ones made in the demo as a restaurant dessert.
Again we got the recipe for the creme chantilly but it was pre-made for us.
There were lots of skills packed into this one day class and you get the opportunity to ask lots of questions.
We covered elements of a baked sponge, fillings, sugar work, cake decorating, hot desserts and resturant plating.
This did however mean that the class was quite rushed in order to finish on time.
Also, the demo's are on the counter at the front of the class which can make it difficult to see as there are 16 people in a class.
We were told that we cannot take videos of the chef/demos (which is completely understandable) however I did also get told off for taking videos of my own work which is why
most of the footage of the class is photos.
