(This is the first in a series of interviews with Al Johnson's most long-term kitchen staff, the people who've made the entire business what it is today.)
Insiders know the truth about what has made Al Johnson's Swedish Restaurant & Butik an almost 75 year success. It's not the goats on the roof, not the building's log construction, it's always been the...kitchen. And talented, hard-working people are what made that kitchen run like a well-oiled machine. Over the years, there have been many hundreds of people in Al's kitchen, some of them making a brief pit stop, on their way back to school or to success in other endeavors. For the few who stayed for 10 years, 20 years, even 30+ years, there are all sorts of personal rewards.
For 30 years, from 1953 to 1983, Danny Peterson was Al Johnson's overall chef and kitchen manager. In fact, he was Al's first-ever employee in that role and set many of the standards and processes that we still follow today. After leaving Al's, Danny bought the Viking Restaurant in Ellison Bay, where he carried on the Viking's fish boil tradition for 3+ additional decades.
