Hello my Friends and Happy Father's Day to all the Wonderful Fathers out there!
Today I am making one of my Dad's Favorite Cakes for Father's Day, Coconut Cake! This Cake is so yummy and full of Coconut Flavor! If you’re a fan Coconut Cake, you will love this and it will be your go to Recipe!!
Cake
1 cup (2 sticks) unsalted butter, softened
2 cups white sugar
3 cups self rising flour + 1/2 tsp baking soda, sifted
4 jumbo eggs, room temperature
1 cup coconut evaporated milk, room temperature, (just add 1/2 tsp coconut extract to the milk)
1 tsp pure vanilla extract
1 tsp pure coconut extract
Sweetened Flaked Coconut
Coconut Filling
1 cup sour cream
3/4 cup white sugar
4 tbsp whole milk
1/2 cup sweetened flaked coconut
Cream Cheese Frosting
2 (8 oz) pkg cream cheese, softened
1 cup (2 sticks) unsalted butter, softened
1 (16 oz) box powdered sugar, sifted
1 tsp pure vanilla extract
1 tsp pure coconut extract
Preheat Oven to 350 Degrees
For the Cake:
Grease 3 (9-inch) cake pans with cooking spray with flour, shortening, or butter. In a large bowl with a hand mixer or stand mixer with paddle attachment, cream butter and sugar until fluffy (scrape the bowl occasionally). Add eggs, one at a time, beating well after each egg. Then add in vanilla and coconut extract and blend until well combined. Add flour alternately with the milk to the butter mixture, beginning and ending with flour; blend until well incorporated (do not overmix). Divide batter equally among prepared pans. Level batter in each pan by holding pan 3 or 4 inches above counter, then dropping it flat onto counter. Do this several times to release air bubbles and assure you of a more level cake. Bake for 25 to 30 minutes or until toothpick in the center comes out clean. Remove from the oven and cool completely on a cooling rack. Remove first layer of cake and invert onto cake plate. Using the wrong end of a spoon, poke holes approximately 1-inch apart until entire cake has been poked. Spread 1/3 of coconut filling on cake layer. Top with second layer, repeat process. Top with last layer and repeat process again. Then frost the sides and top with the Frosting, then add Coconut all over and serve.
Coconut Filling:
In a medium bowl, add sugar, sour cream, milk, and coconut; stir until well blended.
Cream Cheese Frosting:
In a large bowl with hand mixer or stand mixer with paddle attachment, beat the cream cheese and butter until fluffy. Next add in vanilla and coconut extract and blended in. Add powdered sugar and beat until well combined. Start on low speed then to high speed.
