Mathanga Erissery
Ingredients
1. Pumpkin (Mathanga) cubed - 4 to 5 cups
2. Salt - to taste
3. Chilli powder - ½ tsp
4. Turmeric powder - ½ tsp
5. Crushed pepper - 1 ½ tsp
Masala
6. Grated coconut - 1 ½ cup
7. Pepper - ½ tsp
8. Cumin seeds - 1 ½ tsp
9. Garlic - 5 to 8 cloves
10. Chilli powder + turmeric powder - 1 pinch each
Seasoning
11. Coconut oil - 2 tbsp
12. Mustard seeds - ½ tsp
13. Cumin seeds - ½ tsp
14. Red chilli - 4 to 5
15. Grated coconut - 1cup
16. Curry leaves - plenty
Preparation
Preparation
1. Boil the vegetables with items 2 to 5.
2. Grind the ingredients for the masala.
3. Add the masala to the well-done mix, add water & boil once.
4. Season with the ingredients excepting coconut.
5. Add coconut to the seasoned mix,
stir quickly & fry the coconut till its aroma rises & light red in colour. Add to the curry & mix.
