You are experiencing the life of 90% of Vietnamese families, the daily meals, and daily activities of the majority of Vietnamese people. Pho, vermicelli, soups, banh seo... are just foods with different flavors, daily meals are stir-fried vegetables, soup and a salty braised dish. Meat and fish may be lacking, but green vegetables are definitely there. Everyday dishes are the real culinary world of Vietnamese people, other places are different. Even the most gourmet Vietnamese cannot fully explore the flavor combinations of dishes in each region. We can transform just one chicken into 30 dishes from braised, grilled, stewed, steamed, fried, salad... with all the spices to turn it into a perfectly different dish. Often, tourists only get a taste of the dishes at restaurants and eateries, but ignore the hidden cuisine in each Vietnamese family.

I salute you both for taking the more scenic route off the beaten path. So Robert is from Texas and Chiara is from Italia but you live in Australia now? Please tell us how you two meet. This sounds fascinating!

In Vietnam, living in the countryside, life is self-sufficient, from natural products such as catching fish in the river, picking wild vegetables growing around the house to cook fresh, nutritious meals every day. It's a way to live and experience. In fact, if they want to improve their lives and create goods, they raise livestock, poultry, seafood and vegetables, so their lives will be better off and richer.

That is shredded pork on the top of salted egg cake. They marinated the pork, then cooked well, then shredding the pork, then pan drying the shredded pork with low heat.

Cá chạch (or cá trạch) is called loach in English. Loaches are fish of the superfamily Cobitoidea. They are freshwater, benthic (bottom-dwelling) fish found in rivers and creeks throughout Eurasia and northern Africa. Loaches are among the most diverse groups of fish.
