Ah advice: have 3 sieves, 1 as a strainer for sticky/sweet liquids: goo, pastry cream and other things 1 as a savory one: mashed potatoes, garlic infused butter etc; 1 for dry ingredients: as the name suggests. Ingredients that are dry.

Excellent and very useful video! One thing I would add if I may is to buy as many of these items at a restaurant supply store as you can. You can usually find one in or around even smallish towns, or online. Not only is the equipment much, much sturdier, but most things are far less expensive. (Half-sheet pans for $3US, Ateco small offset spatula is ~$3, too). I have abused those sheet pans (putting them on a charcoal BBQ pit) and they still hold their shape & wash up clean. They have really cool and obscure stuff, like individual mint julep strainers. And the salespeople are really helpful in my experience. I would never buy baking gear anywhere else now.

TWO POINTS 1. Towards the end when you went through all your main essential, smaller lot of a cooking equipment. You described something used to pick things up with as 'one of these' , it looked like a fat pallet knife. 2. Anyone who has seen this and panicked because they want to make jam but they are now like "ahh, no thermometer!" Don't panic! With jam, ones the fruit has broken down and the sugar has been added keep it on a rolling boil, which is constant to the extent which they look like foam, basically, for about 8-10 minutes. Then take it off the heat, and do the ripple test. Mary Berry welcomed me to the world of the ripple test i have always had great results and never have i used thermometre!

Hello from Jamaica. I just discovered baking 3 weeks ago at the age of 38. When you said you started late and mentioned in your 20s I started to feel as if i dont have alot of time to start a business since i am no expert in the field and I'm really doing on you and other KZitem videos to learn the art. I baked my first cake on Father's Day. A Jamaica rum fruit cake and it was a hit. My next is to try your red velvet cupcakes. I went and got all the ingredients and just waiting on the color paste which I ordered online to arrive. I do have a quick question. Could you tell us what brand of electrical scale do you use please? Thank you in advance and keep up the awesome work

What size measurement cupcake cases do you use? And where do you get yours from? Cupcakes cases i find are too small and muffin cases are really big. Im sure there is one slightly smaller.. Also my white cases always stay really white, but when i see your cupcakes come out the oven i see the case isn't white, and u can see the sponge from the outside. what cases do that? (if you get what i mean).
@daimchughtai2963
9 жыл бұрын
+MakeupByParesa Hey, hope this helps. I find that the perfect size is a 40x50 mm cupcake case/liner. It is taller than the regular cupcake cases that you are referring to, I find them to be too small as well. As far as the second part of your question, her liners aren't greaseproof if the sponge shows through. You are actually using really good quality, grease-proof liners if they stay white after baking. :D But, if the transparent look is something you are looking for, ask for liners that aren't greaseproof. They would feel more paper-y and not waxy at all and e slightly on the thinner side.

I find my cooling-rack essential. I'm no expert however I think that cakes cool better (more evenly?) if air circulates all around them. I tried using the spare rack that a took out of the oven before pre-heating it but a proper cooling rack is much better especially if the cake is resting directly on it. Thanks for the tips about decorating tools/equipment, after a few years of baking plain (tasty but un- decorated) cakes I am just starting with icing so I really appreciate your advice. All the best from Sweden!

Where do bakeries buy chocolate (chips etc) from? I mean it would be quite expensive to buy from general food stores like Asda, Tesco etc. so there must be another place to get chocolate in wholesale, but I've tried to look for it on the Internet and it has only given me expensive results like £15 for 1Kg chocolate chips. Can anyone help me please?
