I am loving these videos. I have ordered items in the past but have hesitated some purchases because I wasn’t sure what the end results were or best way to use. These videos are very helpful in that way.

Just bought 16 oz of Batter Bind S and EverCrisp. Sold me on the onion ring crunch factor. Gonna use Batter Bind S on fried chicken. Excited.

Can this be added to choux pastry dough? Or would the direct addition of moisture from the water & eggs basically negate any effect of the Evercrisp? Like the evercrisp would be a saturated wet doughy mixture, not just used as dry breading coat....

Yes, we've added EverCrisp to biscuits and loved how they came out. Haven't tested choux pastry dough but there are definitely a lot more baking applications that we haven't explored yet.

So you say you can make a meringue with the versawhip and any water-based liquid..... Would that be able to be torched or dehydrated? Would it need another stabilizer to do that? Trying to an eggless hard meringue.

We haven't done that for the meringue but we do torch our vegan marshmallows made with versawhip and those hold up

I’m still not totally clear on the difference between evercrisp and crisp coat, and when to use which for certain applications. I do understand crisp coat seems to be better for a dry dredge situation, but both can be added to batters so what’s the main difference? Thanks!

It would also help in pizza dough if you're looking for a crispier longer texture. Would also help frozen pizzas with their freeze/thaw stability.

EverCrisp is a wheat dextrin. It has been processed to be gluten free even though it is derived from wheat.
