100 gr minus yeast (50 gr main yeast + 30 gr left at room temperature for exactly 4.5-5 hours)
10 g salt + 10 ml
How to make sourdough bread
First of all, 1.5 hours before the yeast is ready, water and flour are taken into the mixing cabinet, kneaded a little, covered and left. When the yeast doubles or when 4.5 hours is full after feeding, it is added to the dough we kneaded, kneaded for 3.4 minutes and rested for 1 hour.
Then salt and water are added, and this time the dough is kneaded for about 10 minutes, until it stops sticking to the hand.
Cover the pyrex and make 4 folds every 45 minutes, take it to the counter, fold it, cover it with a cloth and let it rest for half an hour,
It is taken into a lightly floured basket, kept at room temperature for half an hour, covered with a cloth and taken to the refrigerator for about 15.18 hours.
The oven is heated with a fan at 250 degrees for 45 minutes, then the pot is carefully removed from the oven, inverted into one of the breads, the top is scratched lengthwise with a razor blade, the lid is closed and the oven is placed back in the oven, the oven setting is reduced to 230 degrees, then here for 25 minutes until the lid is browned, about 20-25 minutes. It is cooked without a lid, “rested for an hour, then you can cut it and serve. Enjoy your meal.
