To clean the round grill grates, I've been using water heater drain pans from Home Depot. I just soak them in ammonia or vinegar with baking soda and some dish soap. All the gunk comes off so much easier.

The pan has a hole, but I just plugged it with a piece of aluminum tray and some epoxy.@@GulfCoastSmoke

A good support group is key, unfortunately I don't have until cookoff time, so currently I'm leaving all my stuff on the trailer, drums, tables, sink, and that way I don't have to load everything up my self. Since we are cooking on the trailer now, I don't have to set up and unload, so that's a big help. Love your videos brother.

@GulfCoastSmoke it's still a work in progress, hopefully it will be finished by the start of new year. It's a 16' enclosed porxh trailer, and it's going to have a fold down gate that works both as a ramp and once everything is unloaded I will set my drum on it. Slowly but surely it will get there brother, still debating on signing up for Uvalde, but if youll make it out to Traders Village I'll have it there.

I co-sign all of this. Also, for me, running solo means I absolutely HAVE to plan and buy ahead. I string out my meat buys over weeks or even a month and freeze it. I also double check all my seasonings and injections to make sure I will have more than enough for the competition. Lastly, double or even triple up on everything you can. I have two injectors, two temp probes, spare batteries, two multi probe thermometers, etc… Build your stock over time and buy in bulk when you can.

Put all of your Au jus from your ribs, pork, and brisket in it and use it to your advantage!

So, you can pour the Au jus (juices) from your meats into the grease separator which allows you to separate the fat from the good stuff! Then you can pour all the good juices into a pan or bowl and use them in your cook!

I don't use chemicals in my smoker or my grills I use a steam. I don't want that chemical taste on my food.

It’s an oven/grill cleaner that’s made for things like this. Also, a good clean hour of a hot fire will burn out anything you don’t want in there, which is exactly what we do 🤝🏼
