Today we’re exploring the town of Cervo, Italy. A seaside village with a well preserved medieval town. We’ll take you on a tour of the town, show you the sea, and make one of the area‘s traditional dishes, Trofie al Pesto.

Trofie al Pesto Ingredients:
2 large potatoes
130g fresh green beans
400g trofie pasta
8 tbsp pesto
Parmigiano Reggiano
Recipe:
Bring a large pot of water to a boil.
Add your potatoes to the boiling water and cook until they can be easily pierced with a knife. Remove and allow to cook. Peel the potatoes if they have a thick skin. Once they have cooled, chop them into bite-sized pieces.
Add the green beans to the boiling water, cook for about 3 minutes, then remove.
Add the pasta to the boiling water, and cook until al dente, about 7-9 minutes for most varieties.
Off the heat, toss your pasta, green beans, and potatoes with the pesto to combine. Serve with some freshly grated parmigiano reggiano.
