Today we’re exploring San Deigo, California. While we’re here we will check out the local beaches, wildlife, and most importantly, the Mexican food! We’ll show you how to nopales (cactus) tacos at home for a delicious vegetarian meal.

Nopales Tacos
5-6 fresh nopales, trimmed and prickly parts removed (you can also use jarred)
Corn tortillas
Cojita cheese for topping
Cilantro for topping
Pico De Gallo
1 large tomato
1 white onion
1 jalapeno
Fresh cilantro
1-2 limes, juiced
Pinch of salt
Guacamole
2 avocados
1-2 limes, juiced
Pinch of salt
Begin by making the pico de gallo and guacamole to top your tacos with. Finely chop your tomato, white onion, and jalapeno and add them to a bowl. Chop up 2-3 teaspoons of the fresh cilantro and add it to the same bowl. Add your lime juice and stir to combine. Salt to taste.
To prepare our very simple guacamole, just peel and chop your avocados, add some lime juice, and mash until smooth. Add salt to taste.
Next, cook your nopales. Heat some oil in a pan on medium-high heat. Add the nopales to the pan and cook them for about 4-6 minutes on each side, until they start to char a little bit.
While your nopales are cooking, prep your tortillas. Heat up a dry skillet and add the tortillas one at a time, cooking for about 30 minutes per side.
Now it’s time to put it all together. Chop up your cooked nopales into small strips. Place a few strips in each tortilla and top them with the pico, guacamole, cotija cheese, or whatever else you like!
