It is making a difference for us also. We have just become empty nesters (with an occasional visit from a chick) but our bills are ridiculous. Sometimes we just go out for sandwiches because THAT can be creeper and easier. Watching your videos give me hope and inspiration. I’ve started buying dry milk (because we don’t really drink it) just to have it for cooking and it won’t expire so fast. Now I know coconut milk can be used instead of heavy cream I’m going to get that. Is the shelf life longer for coconut cream?

Oh my goodness, I love your videos. Two reasons- I’m getting out of a 20+ year relationship with someone who was very picky and judgmental. His thoughts became my thoughts about most things. I have this terrible anxiety about cooking and his pickiness didn’t help. Through the years I learned to mute out what my own tastes were. Watching your videos helps me find what I actually like, and makes very accessible recipes that I can look forward to preparing. The second reason is because my daughter usually has friends stay over with us and I feel bad not cooking for them. Again, the anxiety comes in. I’m such a slow cook too. That enchilada recipe is totally something I can do and I feel like they would love it. Thank you so much for sharing these recipes. No hype or unnecessary backstory, just great food 👍🏼

The turkey and rice taco's is one of my favorite meals I love to stretch it further by adding black beans and sometimes corn ... or make it vegetarian by skipping the ground turkey/beef and just the rice, beans and corn ... so good

Wal-Mart usually has Great Value "cream of" soups for much less than the Campbell's brand. I've noticed a lot of "shrinkflation" where frozen veggies are concerned. Thank you for mentioning about checking the price per ounce, as there are many who haven't been taught that. It would be nice if all high schools equipped their students with financial skills.

We love knorr's Mexican rice in our tacos! We feed 6 by using 1lb meat, 1 bag rice, 1 can beans, I can kernal corn. It is a meal for under $8 even with a few toppings!

I'm really getting serious about my grocery and gas bills, not to mention electricity. I've started incorporating homemade biscuits, cornbread, fried bread, dumplings, anything I can to add to our meals. I spent 100.00 for a 2 people budget for the week and that's just the basic ingredients needed. I add homemade dumplings to any stew, soup or beans as well, just trying to make everything stretch and no eating out at all.

For the tatertot casserole, the meat can be substituted for 2 cans of cannelli or northern beans, drained. I made this for my Girl Scout unit for day camp. We fed it to 24 girls/ adults cooked in a box oven, and it was the girls' #1 lunch for the week!

Tip: For mixing the ham, cheese, and green onions, you can put them in a ziplock bag, and shake. (When I "stir," I often stir stuff out of the bowl!) 😀

You just wasted a Ziploc bag, which aren't cheap and then you're just throwing it away. Just mix in a bowl and then wash it after. Easy!

We love tator tot casserole!!! I make my double bacon cheeseburger version as well. Add seasoning, ketchup and mustard to the meat mixture, a can of cheese soup and roughly a half can of milk. I just judge it. You'll know the consistency it should be. I then either fry up a couple of pieces of bacon or have bacon pieces ready. I put about half the bacon in the hamburger mixture. Then the I put one layer of tator tots on the bottom, add the meat mixture, a handful of cheese, then another layer of tator tots. Since it's doubled I bake at 375 for about 40 minutes. Then I pull it out cover with cheese add the rest of the bacon and put it in to melt. You can put whatever you want on it. Condiments, lettuce, tomato, pickles, you pick. I love pickles so I just eat them on the side. My hubby likes his with hot sauce. Side note #1: This is far from healthy, but is very filling. We are also a family of 7. All those tator tots are a belly filler and stretch a meal with a small amount of meat. Side note #2: I've always served veggies or salad on the side, I've never seen green beans put in it. I LOVE green beans. Now I have to try it next time I make the regular version. Thanks again for more wonderful content.

Thanks for the tips! I wish prices really had gone up only the 9-10% that the news reports say. I'm seeing so many basic foods (meat, milk, eggs, cheese) for which prices are up 100-200% in the last two years. And, don't get me started on shrinking packages. I enlarged my vegetable garden.

I make tater tot casserole a little different. Cook meat put in container. Then a can of corn. Then a cream soup. Usually cream of chicken or mushroom. Dump and spread. Then cheese slices. And then the tater tots. I bake based on instructions on tater tot bag.

One way I make my sausage broccoli is by first steaming the broccoli and while that is steaming, I usually bake the sausage to brown it or brown in the pan. I throw everything in a pan, add spices, seasonings, coconut milk and about 1/4 angel hair pasta... I mix it well, Turn off the heat, keep the lid on and allow the steam to continue to cook the noodles... it takes about 10 minutes or so. Mung noodles work well too!

Tater tot casserole has been one of my family favorites for years. We use bag of frozen mixed vegetables instead of green beans for variety and sometimes use cream of celery instead of mushroom. Also, I put a little bit of cheese along the top of the tater tots and stick it back in the oven just enough to melt the cheese on the top. And it's great as leftovers!!

Was trying to figure out what to make tonight since my roast didn't cook in time. Managed to make tator tot hotdish with the random veggies I had and a diy sauce. Then while that was cooking made the veggie pasta...added extra veggies and 1lb sausage. So now I have multiple meals made very unexpectedly. Thanks so much!

I made your tater tot casserole tonight for dinner and it was delicious, my sons went back for seconds, I did add a half can of corn to it also to make it stretch a little further. It will definitely be made again. Thanks for the great ideas

I use your videos to build my qeekly menu as our food stamps are $448 for our family of 4. We've been able to stretch the stamps until the 15th of each month! Usually we run out after two weeks. You have really helped us ❤

Brilliant ideas I have started meal prep.. Its, the same in the UK. Food 30%dearer utilities 50%dearer.. In fact I went to my fridge whilst watching this and meal prepped enough for 4 days.. Only one use of the cooker top.. Ty for inspiration 💕👍

Also if anyone is in need of a meat sub TVP is super cheap. Typically you can get it for around 1.30 a lb in bulk or 3.59 for Bob's Red Mill. I use 1/2 cup of dried TVP to 1 cup of hot water. You can flavor with bullion so it tastes how you want.

Green onions are no longer less than $1 for me. They're now $1.50 a bunch for teeny little skinny ones. 😭😭 It's daylight robbery! But if you buy a bunch and put them in water and leave them in a sunny window or under a grow light, they will last a long time and you can keep cutting the tops and they'll grow again. Since I've been putting them in a pot outside or in a jar inside, they're practically free now! You can do the same with lots of herbs. Thank you so much for these ideas! I need all the cheap recipes I can get nowadays.

If you reserve a cup of pasta water, you can add that instead of cornstarch and it thickens the pasta beautifully.

My way of draining cooked mince is to use a spatula to move the mince to one side of the pan, then slightly tilt the pan, & the fat will run from the mince & pool & you can use a table spoon to spoon out the fat for future cooking use as lard. 500g fresh beef mince has about 20% pure fat.

I have a fun twist for tot casserole. I use mexican corn, the kind with peppers already in it, for the veggie and Cambells Fiesta nacho soup or cheddar cheese soup, then top it with Taco cheese, the cheese that has some taco seasoning.

After following your cooking recipes and saving tips as well as shopping at Walmart ( and sometimes Aldi’s ) for ingredients - I brought our weekly grocery bill down from about $350 to $185 on average. Plus the meals are fun to make and delicious to eat! Thank you!!
