Vamos a aprender cómo elaborar esta Eszterházy Torta, una tarta de origen austrohúngaro.
Este pastel, denominado "Eszterházy torta" en húngaro y "Esterházy-Torte" en alemán, toma su nombre gracias al Conde Pál Antal Esterházy (1776-1866), miembro de la familia Esterházy y Ministro de Exteriores del Imperio Austrohúngaro.
Por lo visto, el pastelero que creó esta tarta elaborada con avellanas y una decoración exterior única y diferente. Su intención era complacer al diplomático y lo consiguió.
Según la receta original, la masa de las capas de bizcocho no se elaboran con yemas ni harina. Se llevan a cabo con un merengue con avellanas molidas (aunque también podemos encontrar muchas versiones hechas con almendra), también conocido como Dacquoise. Las capas de bizcocho, que tradicionalmente son 5, deben ser muy finas. Entre cada capa de bizcocho, encontraremos una crema hecha a base de yemas y mantequilla.
Lo más característico de esta tarta es su decoración superior. Se elabora con una capa de glaseado fondant y chocolate fundido, ingrediente que nos servirá para crear el patrón tan característico. Finalmente, se decoran los laterales con almendras laminadas o picadas y se suele acompañar con fruta confitada.
