thanks for the tips - my teenager is working at a very busy brunch place as a runner and the chef says he has to carry three plates because the window backs up. He used to work at a pub w/rectangular plates that he could easily carry in threes, but has been afraid to try carrying three at the brunch restaurant. This video really helped w/carrying round plates. "Three fingers down, two up." 👍👍

@@TheWaitersAcademy I worked for three days and was disappointed.The place wanted us to run everyones food, no dedicated runner, pre bus our tables and the other servers tables as well. To finish off the night; rip the entire kitchen apart at 9:00 PM and put it all back together then roll 300 forks n knives. I was so tired at day two my legs were buzzing and I could not sleep a wink. I took my apron and shirt and dropped it off this afternoon. They also had a bad POS system that was programmed incorrectly. I felt really sad for anyone who has to be an octopus of a waiter in a slave environment like that. In my opinion you can not do all that very well, the clients will be getting pushed aside. I think they will never keep servers for more than a few months at a time. Too Hard-

i’m 16 and i’m a waiter at Frankie & Bennys which is a classic italian restaurant all over UK, and i can manage 3 plates, two on one arm and one in the other hand. it’s very handy especially on busy evenings but i’m scared to do anymore but i’m not going to rush, i’ll try this when i feel confident but thanks for tips

If it ever helps anyone. While you're still new and getting used to carrying the trays I would take my risk when I was bringing plates back to the kitchen to be washed. Just absolutely stacking my tray with plates and cups so that I could practice the weight and how I handled the tray without risking spilling all over customers. Worst thing might be when something hits the floor but it allowed for me to get stronger and more confident with heavily loaded/off balance trays. Of course know your limits, dont stack the tray in such a way that things are guaranteed to fall but yee

I wanted to give up on my first day of just barely learning because it all seemed so overwhelming but I just stuck in there and it's only my 3rd day but I'm learning so much and it gets easier the more confident you get. You can carry the fourth plate as sometime I do by holding it with your middle finger but I don't recommend that and that is why I didn't show it on the video! Anyway in a fine restaurant you will be allowed to carry maximum of 3 plates and everything else is ...under the standard! Thanks for the good word!

I will go back to working a bit as a waiter/barista after a long break due to COVID-19 lockdowns. I was just seeing that I have to carry four plates, and when I went to my kitchen and picked them up, I realized just how not doing it so long can make your mind go blank. That, and I had square plates ! LOL

Love this video @ 2:20 you see he holds the plate upright with his pinky @ 2:56 you can see he holds the bottom plate with 2 fingers in the ring, the middle finger holds the weight of both plates, and the pointer is holds the top (it is important to see he doesn’t pinch his fingers between the plates.) @ 4:24 you can see that he isn’t using his knuckle to hold the third plate which is a mistake that people often make. But if you’re working for 8+ hours you cannot balance a third plate on your knuckle you’ll destroy your hands that way. The third plate is balanced in a triangular shape with your forearm, finger, and bottom plate.

@7:28 you can see that even subconsciously he grabs the heaviest part of the plate. Meaning he grabs where the meat is closest to his grip, not the potato side where the plate is light. You want the weight closest to your body/grip. He even has the top plate where the heaviest part is closest to him and the light weight is towards his fingers. @8:15 he separates the weight of the food so not all the heavy weight is at his grub in order to balance it so the weight is even and the plates become flat. @8:28 you see his elbow is 90 degree angle. Never stretch your arm out. You will always be able to hold more weight at a 90 degree angle, if you keep your arm straight down and pushing into your body you can hold heavy weight. Focus on bringing your wrist up and not your entire arm. @ 10:40 he shows you arms are no long straight but close to the body and bringing the wrist in. Careful not to tilt your wrist in too much because you can get hurt running that weight with your wrist overly extended inward. So if the plates have sauce carry 3. If they don’t have sauce carry 4 when you’re comfortable. But you should always be carrying 3 plates unless you are carrying 2 heavy bowls. * Or if you carry a sauce plate on top and a heavy bowl on bottom you might drop the bowl. Because it’s too heavy & you’re trying to balance the top plate so the sauce doesn’t spill, it can be tough at first but it’s doable. Focus on 3 plates and you’ll be fine. If it’s two heavy bowls, run the bowl, then come back for the plate or maybe they have the large treys that you put over your shoulder. Stretching your wrist is important if you work at a place where you use those huge oval treys. Because you can snap your wrist back. You can practice holding some sort of heavy box that way to build forearm strength. Best suggestion is lifting weights and instead of just doing curls, you lift the weight up, and then twist your wrist so your knuckle faced up towards your nose. That will build your forearm muscle immensely fast. Goodluck everyone!

Why do you serve food on the right side but when you come to put food on the plate you do it from left side? Thanks for the suggestions Damjan! You serve food from a food tray from the left with the right hand because this is the shortest distance the hand have to carry food from the tray to the plate! Why they serve plated food from the right with the right hand, to be honest i have no idea! For me the american way : serving with left hand from the left makes much more sense! But I have not made those rules! They are set in stone for hundreds if not thousands of years and it is what it is! I am just showing how it is done properly! Greetings back to beautiful Croatia!

Had a Female server who was a pro when it came to carrying foods . Same methods. 2 on each arm. The third plate she would carry on her right hand. Assuming she worked in the restaurant business for a long time. Yes. Placing the plates on the arm is tricky. When i was a busser. I would collect dirty plates from customers. If 4 people were dining. I would collect all four plates. If more than that. Than collect what i can grab head back to the kitchen to unload. And continue with another table. And so on.

Every restaurant has a different practice of serving but you should have some one there who can teach you and explain to you what to do and how to do it! I work in Italian restaurants for many years and we always serve the noodles in a plate for the guests. This should not be a problem

Hi Nimisha, your question brought me back in my past! At the very beginning I had to work in a restaurant with 24 tables! I was the only waiter and the restaurant was full every evening! Running! This is all I remember! But if we are serious ....efficiency is the answer! You really have to be efficient! Know your food and drinks and make no mistakes! The kitchen too! They have no right to make mistakes because that will screw you up! Then split the restaurant in 4 sections or corners! When you go to a table on one of the corners make sure you take care of all other tables in the corner, cause you won't be able to go there soon!! I was working on four stations alone and I treated them equally! Not an easy task at all! Learn how to say : One moment , sir! I will be there in a few minutes! Don't get lost running from one corner of the restaurant to the other corner just because someone has waved at you! Work one station at a time....as fast as possible and move to the next! Those plates are pain in the ass for real! I carry those one in each hand or max three plates in two hands! Nothing particular I can say about carrying it!

I do not remember the video of where you serve with spoon and fork. I tried and tried to stop and repeat of how you serve professionally with spoon and fork rather than tongs. Could you do a video of how To Do... You moved too fast and I still fumble with the spoon and fork to serve flip and flop between the two. Slow motion tutorial perhaps? Please

Leo, you don't need a slow motion video! This technique takes two days to get used to it! If you don't see the position of the fork and the spoon in my hand, ask one of your more experienced servers to show you and then just try for two days repeatedly to work with it and you will be fine!

Try to be relaxed. Follow your head Waiter's lead. Listen carefully and ask questions if you have not understood what is required from you. No one expects wonders on a trial day. Smile, be polite and stay positive. This is what matters most. Good luck

Hi Jay, just do push ups! Do a lot of push ups and use your fingers as well. You will get stronger!

Hey Cha, please don't freak out! It seems hard and difficult at the beginning but as everything else in life you can learn it in few tries! Yes, carrying plates long distance and long time will hurt you hands and fingers but you will get stronger with time and you will be fine!

Great video, now I know what I should be practicing at home :) Just a quick question though, my friend. I'm actually going to be moving to Switzerland in about 4 months. I am from the USA but I am also a Swiss citizen. I speak English as my mother tongue, and currently am studying German intensively because I hope to be able to get a job in a timely manner after arriving in Switzerland. Is this achievable, do you think? Assuming I study German about 10 hours a day, for the next 4 months or so? I will probably be starting at a smaller restaurant first, as I don't have any prior restaurant experience, but I am completely okay with that. If I apply as a waiter in German-speaking Switzerland, do you know how it goes during the interview process as far as language fluency goes? Perhaps I have a good chance in Zurich? Really high quality videos by the way, it is nice to see people who are passionate for their craft :)

Thank you, Kevin, for the kind words. It's always nice to hear that those videos are useful! About Switzerland: first I have to tell you that it is a great place to be and if you are in Zurich...well, it is fantastic city! It is also multinational city and you will hear more foreign languages than German, but still if you don’t speak German, getting a job in a restaurant will be tough! So, my advice is, put some real effort to learn the language and you will increase your chances tremendously! Now comes another disadvantage: no experience! The thing is that everyone from Europe wants to work in Switzerland, because you get pay great money and therefore they are not suffering for staff like in Austria or Germany! Getting a job without experience will be very tough, unless you have amazing attitude and a brilliant smile and you just totally kill them with kindness 😊 If you can get a part time job for those couple of months in a small restaurant in the states you will do yourself a great favor! Then put in your resume that you have 2 years experience in USA 😊 Another great advice is: watch all the videos I am posting and practice at home 😊 😊 😊 Be the friendliest and most positive person during the interview. I think you will do great! Just push really hard and get any job they offer you, just to put your foot on the floor, then go from there! Good luck.

Yes it is hard especially in the beginning! Try to take it slowly! Your hands will get stronger with time! If you have to carry two plates in one hand and a third one in the other, you can always support the left hand with the right, under the plates, so you balance the weight!
