Today I made honeycomb toffee (sponge toffee).
It looks like a honeycomb, so it's called Honeycomb Toffee.
Honeycomb Toffee is very similar to Korean traditional candy 'Dalgona'.

It was really interesting that Korean candy and American traditional candy have similarities.
It's easy to make and tastes good, so make sure to make it!
▶ Ingredients
200g Granulated sugar
70g Water
40g Corn syrup
10g Honey
10g Baking soda
1) Put water, sugar, corn syrup, honey in a pot and heat it without stirring.
2) After heating to 150℃ (300℉), turn off the heat and add baking soda.
3) Stir with a spatula until baking soda mixes thoroughly with the dough. And remove it from the pot immediately before it gets dark.
(The darker the dough, the more bitter it is.)
4) Cool on parchment paper or Teflon sheet until hard. (about 30 minutes)
* Storage: If left at room temperature, it will quickly become sticky on the surface. After completely cooling down, keep sealed from air. In seasons of high humidity in the air, it is recommended to store with a desiccant. If well protected from moisture, it can be stored for more than 1 month. Due to condensation, moisture forms on the surface and makes it sticky, so refrigeration or freezing are not recommended.
