Fainá is a nutty, peppery flatbread, related to the Italian flatbread farinata, made with garbanzo bean (chickpea) flour. The tradition of making garbanzo flour flatbread was brought to South America by Italian immigrants. It makes a great appetizer, especially with toppings. It's a gluten-free and vegan option to serve with dips or condiments
Ingredients:
200 g garbanzo bean flour
500 ml water
¼ cup plus 3 tbsp olive oil
½ tsp salt
freshly ground black pepper to taste
200 g green onions sliced
Method:
1). In a medium bowl, mix the garbanzo bean flour with the salt. Whisk in the water water until the mixture is well blended.
2). Set the batter aside for about at least 3 hours at room temperature to let the garbanzo flour absorb some of the water.
3). Preheat the oven to 450 F. When it is hot, place 3 tablespoons of olive oil in a 12-inch pizza pan. Heat the pan in the oven until very hot.
4). Add the ¼ cup of olive oil to the butter and whisk to combine.
5). Remove the hot pizza pan from oven, and immediately pour the batter into the pan. For the Green Onion version, sprinkle 1 cup of sliced green onions over the butter.
6). Place the pan back in the oven on the lower rack and bake and bake for 5 minutes.
7). After 5 minutes place the pan on the to rack and bake for another 20 to 30 minutes until it's golden brown.
8). Remove the pan from the oven. Sprinkle with freshly ground black pepper, cut the flatbread into slices and serve hot or at room temperature.
