Fajeto (Mango Kadhi) and May Ni Chooti Dal
You must have had Aamras hundreds of time but
have you tried Fajeto and Moong Chooti Dal yet?🥭🌿 Fajeto is a traditional Gujarati dish made by taking out the leftover pulp from mango skin and its seed-stone(leftover after making Aamras) - showcasing our belief in using every part of the mango. The process involves washing the skin and seed with water to remove any remaining pulp, resulting in a flavorful and unique dish that is a perfect balance of sweet and tangy.
On the other hand, Moong Chooti Dal is a simple yet delicious dish made by boiling moong dal with basic masalas and tadka until dry. It is a comforting, nutritious and high protein accompaniment that pairs well with roti or rice and this flavorful Mango Kadi (Fajeto).
Ingredients:
For Fajeto:-
4 Mangoes
1 cup Water
1/2 cup Curd (Dahi)
2 tbs Gram Flour (Besan)
1/4 cup Aamras (optional)
Salt to taste
2 tsp Oil
Pinch of Asafoetida Powder (Hing)
1/2 tsp Turmeric Powder (Haldi)
1/2 tsp Red Chilli Powder
Few Curry Leaves
1 small piece of Jaggery (Gud)
For Moong ki Chooti Dal:-
Soaked Moong Dal
1/2 cup Water
Salt as per taste
Pinch of Turmeric Powder (Haldi)
1 tbs Oil
Asafoetida Powder (Hing) and Red Chilli Powder
Method:
Take leftover mango's skin and seeds into 1 cup Water Squeeze out all the mango pulp and strain the water
Add 1/2 cup Dahi
Add 2 tbs Besan
Add 1/4 cup Aamras
Add Salt to taste and mix it well
(Add more 1/2 Water if required)
Heat 2 tsp Oil in a pan for tadka
Add 1 tsp Rai, 1 tsp Jeera & 1/2 tsp Methi Dana
Add a pinch of Hing
Add 1/2 tsp Haldi
Add 1/2 tsp Red Chilli Powder
Add few Curry Leaves
Add mango and besan mixture and keep stirring
Add a small piece of Gud
Cook until couple of boils
Further to make Moong ki Chooti Dal:-
Heat a pan, add soaked Moong Dal
Add 1/2 cup Water
Add Salt as per taste
Add a pinch of Haldi
Cook it on medium heat
Remove the excessive water floating on the top of dal
Let it dry and cook well
Heat the pan for tadka
Add 1 tbs Oil
Add Hing and Red Chilli Powder
Pour this tadka in cooked dal and mix it
Cook it on high heat until water absorbs
Enjoy Scrumptious Mango Fajeto with Moong ki Chooti Dal & Rice.
