Early every morning brings buyers and sellers together at the Tsukiji fish market. For two hours it's an action packed scene, where restaurant owners and assorted other fish entrepreneurs wrangle over the catch of the day. A lot of this fish, especially the tuna, ends up on people's plates that same evening. Theodore C Bestor's book, Tsukiji The Fish Market at the Center of the World, is a wonderful historical and sociological study of the market and what it all means.
