Red Wine Braised Beef Roast
3-5lb chuck roast
Olive oil for searing
1 onion chopped
5 large chopped carrots
4-6 cubed potatoes
1 bottle sweet red wine
4 cups beef stock
2 bay leaves
1 tbsp rosemary
1 tbsp garlic powder
1-2 tbsps onion powder (2nd tbsp is optional)
2-3 tbsps of fire and smoke potato slayer seasoning
1 can tomato paste
Salt and pepper to taste

Cornstarch to thicken pan drippings into gravy
Heat pan or griddle with olive oil and heavy sear both sides of roast
Preheat smoker or oven to 350
In heavy duty roasting pan add all veggies and top with roast, tomato paste, all seasonings
Pour over wine and beef stock and mix so tomato paste is incorporated
Place on smoker til beef comes to 210° and is fork tender, should be around 4-6hrs at 350.
(Optional- smoke at 250° for 8-10 for the best results and full flavor)
While meat is resting on counter to cool, remove enough broth to make amount of gravy desired and toss bay leaves
In a pan on the stove bring broth to a boil and add corn starch slurry til desired thickness to be used as gravy
Plate and serve warm
