I’ve been trying to make bread with that lovely open crumb for months now , I tried 100’s of recipes online , techniques etc , none of them produced a really decent open crumb loaf. I followed the instructions exactly in all of them ... no joy ... until finding this recipe from John , I bought a Dutch oven , great investment, and from the very first attempt it was perfect ! I now make this at least 3 times a week and don’t buy bread from the shops anymore. Perfect every time and so easy to do. I even bought a shower cap ! Thanks for the great tutorials John

You are a treasure of solid tips, and that is what makes the difference between an amateur and a professional. Everybody else states that the covered vessel needs a 30 minute preheat, you are the only guy who rightfully says a ceramic oven only needs about 10. I get mine at thrift stores and because they are orphans from the typical slow cooker that died they go for cheap, usually only $2- $3, plus they are somewhat lighter than their cast iron cousin, the only caveat is to replace any plastic knob with a store bought metal one, and if you're the ultimate in cheap like me you'll pull those off discarded cabinets found roadside. ☺

Thanks again, John! Just made this and it came out picture perfect! I added a couple of tweaks and still everything was fine. I went 50/50 with rye and strong bread flour, made the poolish the night before (why not?) and did the four 45 minute rests like with your original baguette video, thinking that the rye might need more time to develop. Wish I could post a picture, it looks so nice. I haven't cut into it yet (I told my wife she could cut it when she gets home), but it smells delicious. Very nice bread and an excellent video! I've been baking breads as a hobby for many years now, mostly using baking stones. I only recently started using a Dutch oven for bread and am so very pleased with the results.

I cooked this today in a "Le Crueset" 23cm iron cocotte (like a dutch oven) with French wholemeal flour (12.4 Protein) with poppy seeds on top and it was a smashing success. Going to try the baguettes next.

Please follow these 4 simple rules when making these baguettes. Give me a comment if you need any more help. 1. Stick to the recipe rigidly, the quantities and ingredients are very important and carefully worked out for successful results. 2. Use digital SCALES for the measurements including the water, don't convert to cups or measuring jugs, they are too inaccurate. 3. Use proper bread flour with at least 12% protein, check the ingredients list on the side of the flour bag for the protein level, protein may show in grams per serving but just work it out, it needs to be 12g of protein per 100g of flour. Plain or all purpose flour has a lower protein count and is great for pastries, cakes, and biscuits, but is NOT strong enough for making bread. 4. Definitely no, I cannot recommend using glass for making this bread, the sudden change in temperature when you add the dough to very hot glass could and probably would cause the vessel to shatter.

I made this last night and it was amazing. I make the french baguettes all the time and they are easy and delicious. I was looking on youtube for a quick and easy bread to make last night and thought that I would search "John Kirkwood" as the baguettes never let me down. I was watching this video and my oldest son walked into the room and asked me if I was watching Winnie the Pooh. LOL. We used to watch that together years and years ago when he was a toddler. I told him that I was watching a bread making video by an amazing bread maker with the soothing voice of Winnie. I want to try the sourdough bread next but I haven't gotten around to making the starter. Keep the great videos coming. My husband told me that I should open a bakery and that's all thanks to these fantastic (and easy) bread recipes.

Some of the happiest memories of my childhood was sitting in the counter watching my grandmother make bread. I always wanted to be just like her when I grew up, and in many ways I am.....but I never got the bread making thing down. Try as I may, it would never rise properly. Then last night, after 39 years of marriage I tried this method. It was perfect! And my husband is picky too. He even liked it. Now I have the confidence to try other types. I put sesame seeds on the Dutch oven bread....by the way my grandmother was Dutch...must have had something to do with it. Thanks for the recipe. I am forever great full. John. This Farmhouse bread is very very good toasted. It is my favorite. After a few days however, the bread starts to easily crumble. What am I doing wrong? Or is that what would naturally happen? Thank you. PS I store it in the fridge in a plastic bag.

I changed the flour to 300g wholewheat flour mixed with 200g plain flour as this was what i had in my kitchen. then follow your recipe and steps, the loaf comes out perfectly. As usual a pleasant and easy to understand video. All explanations make sense and can be easily verified. I use a 50/50 combination of wheat and spelt flour in which I often mix 10 g of bread spice (caraway seeds, fennel, coriander). Everything else is as per your recipe. John, thank you for all you do to teach us about cooking! In one of your french baguette videos you also used instant yeast and had 4 - 45 min periods where you folded the dough. Here you used 2 - 45 min periods to fold the dough, what was the reason? I would like to understand better about the fermentation period. Thanks again!

@@bryany15 There are two techniques. The first is the slap-knead technique he used in this video. The violent slapping of the dough is a kneading technique. It aligns the molecules to create the gluten. A classic no-knead technique would use time to do that alignment (say 12-18 hours). Classic no-knead requires very wet bread (something like 70%). The water and the rising action create the conditions to align the gluten. One variation of no-knead is to use smaller amounts of yeast, and let rise in the fridge for 3 days. Supposedly tastes better, but I haven't the patience to try.

Thank you for your nice explanation. I tried the overnight rise in the fridge. Unfortunately it consists way too much yeast for this as the dough rose soo high over night. I'll try again next time with much less yeast. Also I needed to add much more water to get the same consistency as you showed in the video. But ok, I'm aware that ingredients are different from country to country and I'll have to try until it works for me. But I really like the idea so thank you so much for the inspiration

This recipe is going to be on my bake shot-list for sure! But my only concern, that i have a pot that is not 100% cast iron, but rather assimilation of cast iron, but heavy and with heavy glass lid. Do you think it will do instead of traditional cast iron? (i can't find any cast iron pots where i live :(- )

Yes you can proof over night, at room temp, but you only need to add an 8th of a tsp of yeast.

I made this this past weekend and it turned out perfectly even though my Dutch oven is just a regular metal one, not cast iron. Didn't change anything in the recipe, not even baking temperatures or times.

John. Your systematic explanation is awesome! I tried deviating from your steps and I got interesting results. Instead of using a wock, I let the dough grow in the cold cast iron Dutch oven. Then I put it back in the oven. The bread then grew very large after baking. Tasted real good.

I work out that the hydration level for this recipe is 385/550=70%. Your other sandwich bread recipes look like 57%. Why the big difference?

I tried this recipe and as with all your recipes I've tried so far... even got myself a digital scale... they all came out great. The only itch I had with this one, was letting it rise in my newly acquired banneton basket. even flouring the bottom it still stuck a bit trying to get it out. Can I oil the banneton? Also, do you have a cranberry walnut bread recipe. Your step by step instructions along with your calm voice make me want to bake everyday... which I actually almost do. Thank you.

Hello John! I would like to try this recipe. I have 2 unglazed clay bakers (covered) that I would like to use, each one holds 2 quarts of liquid in the bottom part. Would they be suitable? Would this recipe fit in one, or should I split the dough in half and use both? Also, should I grease the Baker? Thanks for your great videos!

Thanks so much for this lovely recipe chef John! I made a loaf using this recipe with a mix of white and wholemeal flour, it tasted wonderful. I wish I had found your video sooner! One question - when heating up the Dutch oven, should I wait for the oven comes to temperature first or just put it in right away? Thanks and I look forward to seeing more videos on your channel. :)

I use a glass bowl with lid and it cooked pretty well. May I know if I halved the recipe should I use 1/4 tsp yeast as I want to prove it overnight for 14-24 hours. Can I proof it t room temperature instead of in the fridge?

No sorry Maria, you need scales for my bread recipes, if you watch the first 5 minutes of this video, it'll explain why, kzitem.info/news/bejne/rohok6xrkXx-mno 1. Stick to the recipe rigidly, the quantities and ingredients are very important and carefully worked out for successful results. 2. Use digital SCALES for all of the measurements including weighing the WATER, IN GRAMS, NOT FLUID OUNCES, don't convert to cups or measuring jugs, they are too inaccurate. try to use bottled water if possible. Tap water contains chlorine, and in certain areas it is higher than others, which will weaken or even kill the yeast. 3. Use proper bread flour with at least 12% protein, check the ingredients list on the side of the flour bag for the protein level, protein may show in grams per serving but just work it out, it needs to be 12g of protein per 100g of flour. Plain or all purpose flour has a lower protein count and is great for pastries, cakes, and biscuits, but is NOT strong enough for making bread. 4. Thanks again Clair. much appreciated. As long as there's no plastic handles on the dish it should be fine, just be careful when you take off the lid at the end don't put it on a cold or wet surface, but you should get yourself a Dutch oven, it'll last you a lifetime.

Yes that should be okay, as long as the top is wider than the bottom or you'll end up with your bread stuck inside of it.😃👍😉

gorgeous looking bread 👍 does this flour have a good amount of gluten as bread makers say without fair amount of gluten in d flour, bread comes out dense, & wenever i ve made bread with whole wheat it comes out dense not light, but this bread looks light. i dont like store breads.

Finally a youtube video about no knead bread with proper measures instead of cups. John, your channel is mandatory for someone who's serious about bread making. One question. Everytime I tried no knead bread in the past, the bottom always comes out a bit hard. Almost as if it was fried, it that makes sense. I don't have a cast iron pot so I use an aluminum pot. Any idea why the bottom comes out like that? Everything else about the bread is perfect.

Not sure what the reason is, maybe the bottom of the pan is too thin and burning, you need to get yourself and Dutchy, it's a great investment, and will still be being used in a hundred years time.

Just back from a camping and fishing trip, and somehow ended up with a sore wrist and a sore thumb on the other hand (too much home made dragon-fruit wine? too many mud crabs? nearing my use-by date?) Anyway, I recalled seeing something about no kneed bread on your channel. Then I spotted this one with the Dutch oven. I am to cast iron cookware what Emelda Marcos was to shoes. It's a cold morning here at 18 C, I just lit a big wood fire and I am feeling just a little bit thrilled at the prospects of attempting this recipe today. Thank you.

Basically it was battered cod, crumbed cod, or fish fingers (battered and crumbed cod). I also worked out why I thought your accent might be welsh; it turns out that you sound a lot like another youtuber I enjoy, only he's from County Durham. I thought he was from Wales. I was vaguely aware that County Durham was not in Wales so I checked on Google maps, and everything finally fell into place.

Hello John, I checked the protein on the flour I just bought and it said '9.0g of protein per 100g' and '23.5g of protein per serving'. Which one should I be looking at?

Per 100g is the one, and 9g is only plain flour, you need at least 12g per 100, for making bread. It says on most bags "Bread flour".

Hi John, I’ve made this a few times, success every time. Last night, tried an overnight rise, using just a quarter teaspoon of yeast. The dough was initially given five “folds” in the bowl, every twenty minutes. Then left covered for twelve hours. Then loosened with five “folds” and tipped into the wok for an hour. I cranked the temp up to 230C. Baked lid on for 30 mins, lid off for 10 mins. Best result yet. Again, thank you for the inspiration, I’d never have had the confidence without your videos. Your no Knead recipes have changed my bread making experience from un risen, flat, lifeless bread, into something better and tastier than I can buy in a super market, and now I live in the Philippines, it gives me a chance to make bread better than I had at home! OMG. I’m a pretty decent cook but I’ve never baked a thing in my life. I happened upon this video by accident. It looked easy enough so I thought I’d try it. I don’t have a scale so I didn’t measure as carefully as I should. I also left the first rise go overnight, about 12 hours. Thought I’d ruined it a couple of times, seemed dry to me but I carried on. I’m here to tell you it was AMAZING. Can’t wait to try a few variations - like buns.

John Kirkwood yessir. A kitchen scale has risen to the top of my list. BTW, the loaf is a bit small for my family. Could t be increased by, say, 50% for one loaf or is it better to just make two loaves?

Yes you can increase by 50% ATS, as long as your dutchy is big enough.

John Kirkwood thank you. I used my smallest, 6 qt. I actually thought it was too big for my first attempt and my loaf would be very flat. It worked out fine, the loaf didn’t even touch the sides. I’m sure I can go 50% bigger with no worries.

If all I have is all purpose flour, can I still use the same amounts for each ingredient and use the actual ingredients you mention in this recipe and for most recipes in which you ask for strong flour ? Thank you...I love your videos.

You can use ap flour in any bread recipe, but it is not ideal. It has a lower protein count, the bread will be dense and heavy.

@@JohnKirkwoodProFoodHomemade Indeed. I had no idea what the difference was between strong flour and ap flour and I thank you for the explanation. I am quite new at trying to bake. Unfortunately, all I can find these days is ap flour. I usually purchase wheat flour but there weren't any left on the shelves. I made this bread yesterday and it was absolutely Delicious 😋. Your instructions are so simple and so easy to follow. I do have a question: i keep my starter in the fridge and i feed it every Saturday. How much started should i use to make the bread after i feed it?
