Looks good. Trying to eat more vegetarian, but tofu...I just can’t! Maybe it is a texture thing. I have Fibro, diabetes and IBS so cannot eat garlic, onion at all and many other foods in only small portions. I’ve already lost 120 pounds to get diabetes under control. Now, trying to tweak and up my game to gradually more whole food plant based. I am 63 and proof that you can teach an old dog new tricks!

I love bean quesadillas! I don't even think cheese is needed because the beans are creamy. I loved the teriyaki chickpea bowl!! And while all the food looked amazing, your cute dog stole the show for me!!!

Honestly, those bean-adillas have saved me so many times. There are those days when I just want something savory and hearty and you don't want to wait. I whip a couple of these up, watch a KZitem video or two, and then I'm back in business. And yeah, Tuffy is a little ham who tends to find his way in front of the camera. I honestly can't compete with that cuteness.

I feel that there is so much out there telling people what's healthy and what's not, with conflicting information, and I'm really trying to just make delicious food, and to help people transition to a vegan lifestyle. I'm not a dietitian, and I'm kind of fed up with everyone thinking they're an expert.... That being said, I will definitely have more recipes in the future that feature fewer processed ingredients, and focus more on whole plant foods. I just wanted to make something that showed people how cheap and easy eating vegan can be. This is sort of my "Step 1" video. Thanks again!

I'd like to see more of these. My cheap & easy dinner is taking either street taco tortillas (small ones ) or reg tortillas, top with tomato sauce or pesto or spicy hummus and any toppings like black olives and bake for 15 min on 425F. The small street taco size tortillas lets me add different toppings or sauces on several. I've even made spicy mini pizzas with hot sauce, a sprinkle of black beans and vegan cheese. I've also used the corn tortillas too. not as crispy but good.

I really enjoyed this video. I think you should do this “quick & easy” style more often. Many people are often overwhelmed by the complexity of some recipes. We are all often short of time and need something quick and easy. Mine is hot Thai red curry. It takes about twenty minutes to cook the rice and the curry needs a 5 minute prep for fresh and 30 seconds for frozen veggies. Sometimes I add nuts or freeze-dried tofu for protein.

As a recipe creator, sometimes I focus more on what I want to make instead of thinking about what people would actually want to make at home. I'm in a fairly privileged situation where I don't really have to worry too much about how much time it'll take to cook something. It would be more beneficial to everyone if I tried making my recipes more accessible and time conscientious. Curry is one of my go-to quick meals as well. My easy go-to is either rice noodles (cook in 5 minutes) or Trader Joe’s microwave rice with frozen stir fry veggies, tofu and an easy peanut sauce...peanut butter, Sambal, rice vinegar, maple syrup, lime juice and garlic. It’s super tasty! Your channel is one of my favorites. You have a very calm demeanor, your recipes are great and you are very relatable and friendly!

Sandwiches. 1) I make a curry chickpea salad just with a fork (I add chopped almonds, dried currants and cubed cucumber). 2) Saute a 1/4" slab of smoked tofu with some spinach and bell pepper. Smother with hot for food's hollandaise sauce. 3) toasted bread. roasted red pepper hummus with veggies 4) sliced apple, vegan cheddar slice, sun flower seeds (or sun butter), alfalfa sprouts with spicy mustard. Cook it like a grilled cheese sandwich.

These are perfect! I'm currently 🤰and regularly nauseated when I need to be making food for myself to try to get down or for my family. Lazy meals are the best. One of my favorites is: pasta or gnocchi cooked in leftover homemade or canned/boxed tomato soup (water or broth added for extra liquid). I'll try to throw in or top with whatever I have on hand or sounds decent, like beans, leftover or frozen veggies, chipotle peppers, olives, etc. Tons of different flavor directions to go in.

Love that you made this video! I hear that 'I don't have time to cook' excuse from a lot of friends. I am too afraid to ask them what they eat. I've tried to make a point of sharing details of my simple meals as well as my higher-effort ones because it does seem a little intimidating if you are only showing the fancy results. Some tips/comments: I can never find the vegan top ramen. I just throw the flavor packet away. Soy sauce, ground ginger, crushed garlic, and mushroom powder is the ultimate substitute, but ss plus anything really is good. To NOW me, that's delicious tofu, but New-To-Tofu me needed a pressed and well-seasoned and -cooked tofu to make me like tofu. That takes a lot longer, of course. To save time later, I press all the tofu and then freeze it in half-blocks. Set a block out in the morning to thaw. Once it's been thawed and dabbed dry again, it will absorb a marinade pretty instantly. I would still very likely throw it into the air fryer before adding it to a soup. Look for 'fat free' refried beans if you can't find 'vegetarian'. Fat free means they won't contain lard. Still read labels, of course. My favorite go-to-quick meal... Bok Coy and mushrooms simmered in the above-mentioned ramen seasoning and served over noodles or rice. I often stir in extra greens. Fiber is very important. (I generally cook oil-free, thus the simmering.) I am also very likely to just throw some frozen veg into a pan or on a cookie sheet and eat that with some beans and greens. Experiment with seasonings or even a bread crumb/nooch topping. If you are struggling to love veggies, find a way to make them enticing to you. I keep lots of frozen or canned greens on hand, along with my favorite beans, and 3 or 4 of my most favorite frozen veggies. This is cheap, versatile, and doesn't take any planning. Bonus tip: Shredded carrots. Shred a carrot over a salad or veggie dish and it gives you that finished feel like topping with shredded cheese used to. It's visually satisfying. Plus I really love carrots and they are cheap. You can get a hand-held shredder (similar to a vegetable peeler) for a few bucks, so it's no effort at all. Anyway, love your channel. You do regular-person cooking, not leaving me wondering what I should substitute for some obscure ingredient I will never find. Most of the world doesn't live next to a Whole Foods. ;)

A really easy pasta recipe is boiled noodles, and a cup of tvp rehydrated in any pasta sauce. I buy tvp on Amazon in bulk. Most of the time I cut up some bell peppers, onions, mushrooms, (any other veggie I have on hand) and put in the sauce as well. If I'm making a pound of pasta(69¢), two cans of traditional spaghetti sauce ($2) and 1 cup of tvp (less than $1) I can make a meal for the whole fam for less then $4

Great job of jazzing up the ramen, but I'd have to reverse the process by sauteing the veg in a little oil first, then add all the spices with the diced tofu. Finally, add the water with the noodles and voila!! Thanks for sharing.

That ramen is my go-to probably more than I would care to admit. But I never get tired of it! What's your microwave baked potato trick? I've never really had great success. My mom had a cloth bag thing she got at a fair , and that seemed to work alright, but I haven't been able to find them anywhere.

I love all these ideas! I just wanted to add that I prefer silken tofu in soups -- if you've had miso soup, that's the tofu you've had, and it's just amazing and creamy in soups. Also, a can of chickpeas with its aquafaba, seasonings like soy sauce, apple cider vinegar, garlic and onion powder, and a tablespoon of flour warmed and thickened in a sauce pan makes cheezy chickpeas. This has been my go-to for a fast meal, especially once I put it over a baked (usually in the microwave) potato.

I tried this today...Put two 8 ounce tempeh in a baking pan. Mix 1 cup salsa, 1 TBLS brown sugar, 1 TBLS Dijon mustard. Pour the salsa mixture over tempeh. Bake uncovered at 375 for 30 min. Boom, done, yum!

Happy New Year Michael and thanks for the recipes! I made the smokey white cheddar tofu cheese spread for New Year's Eve and it turned out great. The WinCo near my house didn't have the smoked tofu, but adding liquid smoke worked. I'm looking forward to more videos like this one!

If you live in the Denver metro area you have to try Indo-mie instead of ramen. Omgoodness you will fall in love with them. They are vegan!!!! Yay!! They're Indonesian style, instant fried noodles!! I promise you won't be disappointed. You should be able to get them from your local Kingsoopers in the Asian section;) If not the Asian market, Viet Hoa, on Alameda and Sheridan sales them by the case for 10.00 dollars! 225 S Sheridan Blvd, Lakewood, CO 80226

When I'm on top of things, I do the same thing. When I'm not, I'm not. Haha. But that's the best way to do it. Make batches of the staples, and just add them as you go. Thanks for the reminder!

Happy New Year!🎉Those dishes may not be the healthiest but are healthier than what most people eat everyday. Have you ever tried the organic sprouted brown rice from Trader Joe’s. It’s delicious! Feel free to try this I came up with and love it. My husband and I eat a bowl of it plain every time I make it. 1 bag TJ’s organic sprouted brown rice 1 cup quinoa (organic if you can) 2 3/4 cups water ( you can add bouillon or sub with veg broth) 2 tbsp coconut cream (organic if you can) I add it after the rice is cooked and still hot 😊🌱💚🦋

It's all relative. Eveyone has different needs, tastes, wants, desires, time, energy, and resources. We gotta make it work for us. Your coconut rice and quinoa dish sounds delicious. Do you just eat it as is, or do you normally serve it as a side, or under some type of veggie or protein? love the coconut cream from TJ's. I'm actually filming a pasta dish with it this afternoon. I think frozen veg is best when just warmed through. Obviously if you have a ton of thick stalky veggies, you might need a bit more time or water to veg ratio, but the less they cook, the better.

Hello good morning. I have a question. Because I’ve never used our Instapot. Why Poultry setting vs. Rice setting? And if I do not like Soy Milk. What other kinds of Plant Based (Milk) Yogurts could be made in an Instapot?

Howdy! For the most part, the buttons only set the machine to cook for a specific amount of time. It's mostly just habit and somewhat convenience for me to hit the Poultry button and then adjust the time from there. If you hit Manual, I think it starts at 30 minutes whereas the Poultry button starts at 15. It started out as a shortcut, but now it's just habitual. I have tried with homemade cashew milk, and I didn't have the same result. The only milk I've had great success with is the soy milk that I talk about in the video. I've gotten other milks to have a tangy flavor, but do to their fat and protein content, I haven't had other milks thicken up in the same way. I guess that's why most commercial nut-based yogurts have thickeners and stabilizers added to them.

The one thing I mess up when cooking vegan is variety. Too much! I worry about nutrients so I cook with 20 ingredients, usually 4/5types of beans, 10 or so veg, a carb source and a fat source like seeds. It doesn't make for tasty food when you have so much going on :/

What a cute dog! I dig the hot tip of throwing hot food on veggies for them to prep each other. Get beautiful flavor, lessen your grocery-load, reduce waste, decrease sodium, and expand your culinary horizons by prepping batches of your own beans. I recommend stopping heat before unplugging appliances. Thank you for sharing your ideas. Thank you for at least mentioning the considerations of added salt, oil, and sugar.

??Are you turning yourself into a bird in this life then food for the birds at death?? I dont understand veganism. Is it something that has to do with the guilt associated with meat eating and therefore a denial of the responsibilities of one's humanity? I can understand veganism on the basis of illness--perhaps a person has difficulty processing certain proteins. I eat vegan sometimes but not as a way of life. I am human. Life seems to me a process of facing myself without too much self-deception regarding my contingency, weaknesses, flaws and imperfection. I am not heathy without a balanced diet. My hat is off to you sir. You show tremendous self discipline and control to have lived such a food-lifestyle life.

One can be a vegan and eat a balanced diet. Being human does not mean that we need to eat animals or their byproducts. We live in a world today where we don't need to kill animals to get the nutrition we need to thrive. I choose to eat in a way that aligns with my values, and I'm able to do that without compromising flavor, experience, or my health. Anything you can eat, I can eat vegan. Simple as that. Most people are not vegan, and most people are not "healthy", so what does that say?

I love PB&J sandwiches or sandwiches with fresh sliced bell peppers, onions, tomatoes with a bit of vegan mayo, salt and pepper on sandwich bread. Also soup from tomato sauce + broth, beans and favourite spice mix.

Cook 2 packs of ramen with reduced water, add 1 can mushrooms w/juice, 1 can niblet corn w/juice & slivers of raw onions, season as you prefer, and top with toasted sesame seeds. Mushrooms, corn & soy sauce are a great flavor combination

Love these. Good for a 65yo retired woman with no transportation. Not always able to have fresh greens, etc. Also, students on limited food budgets. People giving you grief are maybe clueless to everyday issues?

We are all on our own path, with our own set of obstacles and resources. We have to do what works for us, and keep going. There are a lot of folks out there that are on a path towards what they hope will be "perfection". There's no such thing, and I fear that a lot of people out there are just going to burn themselves with their quest to do everything "right". I was searching for some super cheap vegan meal ideas. These are excellent and can easily be tailored to individual tastes. As far as "healthier foods" are concerned, sometimes money is tight and you just gotta fill your belly with what you can and these are better than a bag of chips! Another simple meal idea I would add would be potatoes with a can of good old vegan baked beans and or veggies. I will definitely be trying all of these, thanks for posting

i have a massive bag of stir fry frozen veggies like broccoli, carrots, baby corn, water chestnuts etc from costco but whenever i cook frozen veggies they are limp and soggy please help?!

I have the same bag of veggies! I usually just thaw those out in a strainer, maybe rinse them with a bit of hot water, and then add them to curries and saucy dishes. I don't think you'll be able to get frozen veggies to be "fresh" or crispy... Think of frozen veggies as pre-cooked veggies. They just need to be warmed through. Anything more than that, they are going to get too soggy. Make a big batch of rice (or soup or sauce or other grain), let it cool, put it in a freezer bag and flatten, letting all the air out before sealing, then toss, flat, in the freezer. Then just break off a chunk of however much you need, and nuke.

Funny enough, I've been trying to stop using words like "healthy" and "unhealthy" in my videos because I'm not an authority, and anytime I use those words, I get backlash. However, I don't say that vegan cheese is "unhealthy", I was stating that beans are healthier. But either way, I shouldn't have said anything about health at all.

I am the only person in my house that eats plant based, so these are very helpful because it cuts the cost and they are quick and easy to throw together. I often don't even have the energy to put a lot of work into my meal after working all day and cooking a full course meal for my family, so these are great for me on nights like that. Thank you!

I get it. In my relationship, I'm the only one who really cooks and eats like I do, but I'm also pretty much the only one who cooks in the house, so it's up to me to make sure my partner gets fed. Having a few go-to meals in your "back pocket" is very helpful. Glad I could be of some assistance. So down to earth. I baked a sweet potato and topped it with a little almond butter and was amazing how delicious it was! Of course, it took an hour or so to cook the sweet potato, but hey, it's a whole food! And can't get simpler! Thanks!

I invested in a small stove top wok and an Insta Pot. I use the wok all the time for stir fry veggies and tofu and ramon noodles! Im transitioning from a meat eater to a Vegitarian who eats mostly plant based meals. I do eat some cheese and eggs. I love bean burtitos! I am learning to like chic peas for a meat sub. I do love hummus. Going to try that last meal.

Congrats on making the transition. It's a great choice, if I do say so myself. Beans are a great source of protein, and can really be a great "meat" in a meal. I love this. I like to be healthy, but I'm not vegan for health reasons and it is nice to just get some real vegan cooking that isn't trying to solve my health issues or trying to unlock the mysteries of meat.

Thank you so much. Yeah, a lot of people are under the impression that you have to cook every meal from scratch to avoid eating animal products. There are a ton of convenience foods out there that are "accidentally vegan" in addition to the new products out there that are intentionally vegan. Sometimes it does take a bit of planning and foresight, but I've been meat free for nearly 4 years, and I haven't looked back. Keep it up!
