WRITTEN RECIPE:
4 large, ripe peaches
1 cup gluten-free rolled oats
3/4 cup Bob's Red Mill 1:1 GF Baking Flour
1 tsp. baking powder
1/2 cup + 1/2 T. organic cane sugar OR 3/4 cup + 1 T. coconut sugar
1/2 cup unsweetened coconut flakes
1/2 cup chopped walnuts or pecans
2 tsp. cinnamon
1/2 tsp. ginger
Pinch of nutmeg
Pinch of real salt
4 T. melted coconut oil (or butter)
To make:
1) Slice peaches. Peel if you prefer but it's not necessary. Put into an 8"x8" glass baking dish.
2) Sprinkle 1/2 T. organic cane sugar OR 1 T. coconut sugar onto the peaches and toss gently.
3) In a medium-large bowl, mix together: oats, baking flour, baking powder, 1/2 cup organic cane sugar OR 3/4 cup coconut sugar, coconut flakes, nuts, cinnamon, ginger, nutmeg, and salt.
4) Pour melted coconut oil into the oat/flour mix, and stir until everything is coated.
5) Pour the oat/flour mix over the peaches.
6) Bake the peach cobbler at 375 degrees F for 25 minutes, or until the nuts and coconut are crispy but not burnt.
7) Let the cobbler cool a little before serving. Serve while still warm with a generous dollop of homemade whipped cream or vanilla ice cream (or dairy-free alternatives). Sprinkle a little cinnamon on top to be extra fancy!
