This preserved daikon radish tastes sweet and salty and has a really nice, crunchy texture to congee, fried rice, and noodle soups. You can also use sweet and salty preserved daikon as a seasoning for fried rice, soup, and stir-fried dishes. Freshly harvested daikon radish whites, salt, and sugar are the only sweet and salty preserved daikon ingredients. You can purchase preserved daikon in Asian grocery stores, but it’s easy and quick to make at home.
▶ Ingredients:
● Daikon Radish, 5kg
● Salt, 200g
● Sugar, 500g.
▶Method:
1 Don't peel the skins. Trim the top and bottom of each radish, and trim away any blemishes or dark spots. Clean the radishes and rinse. Cut them into 0.6-inch x 2.75-inch pieces (1.5 cm x 7 cm) and transfer them to a huge mixing bowl. Toss the daikon pieces with the salt, and marinate overnight.
2 After overnight, you will see salt draws out the radishes’ water. Squeeze as much liquid out as you can from the daikon pieces. Spread them in a single layer on a wide colander. Allow for airflow and sundry for only 1 day.
3 After 1 day, you will see daikon pieces are 75 % dried. Toss the daikon pieces with the sugar, and place them into a jar. Pour the remaining liquid into the jar. Keep it at room temperature for only 1 day.
4 After 1 day, you can store it in the refrigerator and up to 6 months. Recommend storing in the refrigerator for 10 days before use. It tastes sweet and salty and has a really nice, crispy texture. Wash and chop them before cooking.
