If you cooled down the bottle before opening it, you would have less of a problem with it foaming up and overflowing. Water absorbs CO2 and it does it better at colder temperatures. Ideally, you want it as cold as possible, but above the freezing point, so I always shoot for around 33F when I'm carbonating liquids. Also, you might want to consider "burping" the air out of the bottle before you screw the top on it initially. Once the fermentation is done, put it in your freezer for long enough for the temperature to get down to around 33F. Then, take it out and shake it, this might make more of the CO2 that is in the "air space" go into solution with the water. Then store it in the regular part of your refrigerator.

This turned out really good thanks for sharing I will definitely make this again and keep my eye open for strawberries 🍓 to go on sale again soon. I found it tasted good after sitting for a day but tasted great after being in the fridge for 3 days it had a lot more fizz after 3 days I will definitely be making this again.

Instead of doing the yeast everytime you make a fresh batch, I leave about 2 inches of the last batch and add rest of ingredients. It ferments really well. I haven't tried it with the fresh fruit tho. I use a 64 oz of apple juice and the next day or day and a half you have a new fermented apple juice. Thus, I only use the yeast the first time I make it.

Just for anyone going to ask about alcohol content, if only left out long enough to carbonate in a sealed container, it will be less alcoholic than many de-alcoholized beverages, and less than many common medicines and kitchen flavor extracts. Regular wines usually take from one to several weeks to ferment, and as the yeast multiplies, the speed at which it does so will also increase until most of the sugar is gone. To drink enough of this to notice anything, will harm you from all the sugar, or even from too much water in the body. Don't let the fraction of a percent discourage you from trying this if it's something you would like to attempt.

I recommend a place out of direct sunlight in the temperature range between 66° and 72°. Too cold and it won't ferment and too hot and it will ferment too quickly making it more likely that it will explode into a mess. I suggest perhaps under a sink, a closet, a garage or any similar place out of direct sunlight within the aforementioned temperature range.

Not to my knowledge. The ferment will produce a very small amount of alcohol. The longer you let it go the more alcohol will be produced.

If you use a bug you definitely will not get the carbonation if you used the yeast. 2 entirely different things. I have never tried that so if you do please let me know the outcome.

Actually they did; Saccharomyces cerevisiae was first identified in late 19th century. It was then that scientists really began to understand the role of yeast in wine, beer, and other fermented beverage making. Pfff
