Hi Mary, you said any real salt is good but in your examples i didn't hear Rock salt. Will this still be okay to use? I'm new to the fermenting process

You always come with great positivity !! In India we preserve many food items mostly with sugar, salt or oil.. The method you showed is quite appealing!! I'll try this new method for preserving tomatoes 👍🏻 It's really interesting how a same product is prepared,preserved differently in different traditions...☺️ and Learning such different ways is something I always love the most !! Thanks, Mary! I have fermented green beans and stored them on the bottom shelf in my basement( 60F) and they lasted for over a year without opening and then lasted another 9 months in the fridge! They were crisp and tasty. Great presentation. Thanks again.

Regarding salt. You should use 2.5% or .025 salt to your relative weight of liquid AND contents. That means that if you have 600g of tomatoes and 250g of water, you'll take 850x.025 and so you'll need 21.25g of salt for a good fermentation environment.

celery has natural occurring sodium nitrates.which is why it can be used for fermenting..i use celery seeds and powder when i make bacon

Putting your fermenting containers in a tote with a lid also saves a WORLD of cleanup if something overflows too. $10 vs a couple hours of cleanup is worth every penny to me!

I use a canning ring and a coffee filter or two so I don’t need to burp the jar. This looks delicious! I will be trying this when my grape/cherry/pear tomatoes ripen.

I fermented green cherry tomatoes with garlic and Mexican oregano. It was fantastic they tasted like expensive olives. I wish I had a bushel of green cherry tomatoes. I tried it with poking the tomato and it worked ok but I cut them in half worked better. Mostly I think because cherry tomatoes are more firm than ripe ones.

I tried fermenting for the very first time. I did a jar of zucchini relish using a small onion and banana pepper also. Opened it this morning to try and it was SO good. I will be forever thankful that you introduced me to jar fermenting. ❤️ Thank you.

I've always made sauerkraut, but I never would have guessed to ferment tomatoes. This video has been very educational. Thank you for your clear and concise directions. You answered a lot of my questions as well. Good job!!!

Celery juice and celery seeds are full of a plant salt that's why it can replace sea salt. I use celery juice and 1/3 the recommended amount of sea salt. I sometimes add some lactobacillus powder to speed things up.

I do that too to broaden the probiotic profile. Also add some plain water kefir (whey). Have done green beans and doing my cherry toms today. Ooh my yummy. Try putting a branch of the tomato plant in the jar and the tomato flavor just goes off the charts.

Hi Mary! Thanks for the video! For the brine, what is the salt to water ratio? I know you mention TBS per jar size, but what if you don’t have enough veg to fill the jar? Would you still fill the jar to the top with water and use the same amount of salt? Or just cover the veg with water and use the same amount of salt? These two options are different salt to water ratios… it would be easier to know a “brine recipe” that way no matter what size jar you use, you know your brine will be the proper ration… please help! Thanks! :)

My brine/water ratio is 2tbsp salt to 1 quart of water and I use this solution to pour over whatever size jar needed. If I need more I’ll quickly make it up and if any solution is left over I just keep it in the jar until my next ferment. Hope that helps you

Hi Mary. Thank you very much for all your videos so dense in information and for the empowerment you offer people with your recipes. I have a question about shelf life of fermented food without refrigeration. While in the process of fermentation, you say that we can let the gas out the jar by unscrewing the cap a little. Although is this considered to be a jar that "has been opened". Because on differnt other websites they say that the jars can be store on a shelf IF IT HASN'T BEEN OPENED. Would really love your answer on that topic. Thank you very much.

In the wide mouth jars…. You can use the little individual fruit/jellos cups they sell for kids… they fit perfect inside the canning jars and hold the food below the liquid (I fill my jars with salad fixings, then put the little cup inside and fill with dressing, then put the flat metal lid and ring on! Great for work lunches!! My kids fill theirs with ranch and fill their smaller wide mouth jars with veggies…)

Your picture threw a cravin' on me 🤣 I happened to have emptied a dehydrator of whole dill heads and used dill in mine this time. I trimmed a dill head down to what resembled a wheel with lots of spokes and used that to hold mine down this time.

You can put a glass jug of tap water in sunlight for a while and this can remove Chlorine at least. Same happens to chlorine in swimming pools on a sunny day. .

There's no need to eat vast amounts of fermented foods, a little is enough. If you eat fresh raw veggies and fruit and healthy foods, your gut microbes will flourish.

That is correct. You do not need to eat large amounts of fermented foods. But small amounts are excellent for our health and follow the traditions of our ancestors who always included fermented foods in their diet. Love, Mary

Great question. Yes, as Ferments develop, the brine often becomes cloudy. As long as you don’t see any mold, you should be fine. At this point, if you’re seeing a lot of activity in the jar, go ahead and refrigerate your tomatoes. They will continue to ferment in the refrigerator but at a much slower pace and you will prevent the development of mold. Love, Mary

Hi Mary, you are such a great teacher! I really enjoy the way you take your time to explain your processes. I have learned quite a bit from you - things I had not considered or thought about doing. Question: do you wash your vegetables with just water? I buy store bought produce and they tend to have more chemicals than home grown. I don't always buy organic. Is washing with water enough? I look forward to your reply!

Great question, and it’s an interesting one when it comes to ferments. Ferments really thrive on the natural yeast that are on produce so I don’t give them a good scrubbing when I’m planning on fermenting them. But I do rinse my produce with water. And to be honest with you, I don’t stress too much whether they are organic or not organic. It’s more important to me that people eat fresh food… Real food… And not cause themselves stress spending too much money to buy a particular type of organic food. Hope this helps. Love, Mary

So always reserve about a quarter of a cup for your next ferment. Hope this helps. Sweet 100s and Juliettes? Just sat down to rest after picking my own tomatoes and basil and saw your video. Also a whole lot of green and yellow wax beans. Bush beans are fine but my vining beans are about done. Any tips on how to keep them going in this heat? Just washed out a couple half gallon mason jars crying out for use. This sounds wonderful. You are so thorough with your teaching and I thank you for that. Question: would this be a ferment where I can use the pickle pipe instead of burping? Wonderful tip about refrigerating after a few days. So look forward to your teachings, Mary!

i would never use sea salt because of the plastic particles that are found in it. use Himalayan salt only nothing in it but salt check it out

Jar capacity 2 quarts = 1.9 l = 1.9 kg = 1900 g (based that water and vegetables weight have a 1:1 ratio). Adding 2 tablespoons of coarse salt = 27.5 g, it means that the brine has a salinity of 1.5%. Am I right? Isn't too low? How I wish that receipts were always to be given by weight instead of volume.

I have a question ..... I put Olive oil instead of water .....and I punch the hole not at the top but the side.............. it was just a little bottle I tried , but how bad did I goof ? you are so pleasant to listen too , thank you

When you did this, did you refrigerate it? The method that you’re using is not a ferment and you need to be careful when submerging fruits and vegetables in olive oil and leaving them at room temperature. You are creating an anaerobic environment that can open the door to The development of botulism. Be careful!! I would discard them. Love, Mary

I want to try this, I don’t have the white storage lids can I use the lids that come with the jars.our stores here in Juneau Alaska doesn’t carry them.Also can I use kosher salt?

I would say that you can but you'll need to be sure to burp your ferments and/or leave the lid lose so the gasses can excape. Also you likely can use any kind of salt you like for this. The bigger the salt grains the harder it may be to get the m to dissolve into the brine.

Yes, you can use kosher salt as long as the ingredients just say salt and they have not added any anticaking agents. Also, you can use the lid that came with the jar. And as the other commentor said, just be sure to burp your jars. Love, Mary❤️🤗❤️

The right weight for Fermenting is 2% per 1.000 grams of products/ Vegetables. So 1.000 grams ( 1 kilogram ) of Cabbage = 20 grams of Salt

Good morning Mary & Happy Wednesday! Tomatoes are one of the few things I have left in my garden and also some herbs... We've had a really crummy growing season this year with our unexpected heatwaves & fires here in the Canadian Rockies.. My question is: currently I've grown for the first time Purple Basil... I'd like to use it in this recipe... Do you think that would work or would you stick to green? Or perhaps do both?? Have a fabulous day!

I'm pausing the video at 8 min., so forgive me if you answer this later, but I'm confused that you seem to be saying that salt aides fermentation, while I've been under the impression that it has a retarding effect. I'm new to fermenting and have just jarred up some pickles that I'm now concerned has too much salt, especially after hearing your comments. I used 1 c of salt with 1 gal of water for the pickles.. Should I pour off half of the liquid and add half unsalted water to dilute? I'm realizing I even used more salt than the recipe I was following called for.. I realize this video was uploaded 2 years ago but hope you see my comment and can advise..

If you keep your ferment between 68°F and 72°F, you should be fine. To be on the safe side, once you begin to see bubbling and activity in the jar, you can refrigerate it. It will continue to ferment but at a slower rate but you will prevent the development of mold. Love, Mary

I made my first Ferment a few days ago. I was pleasantly surprised at how delicious it was. As I was eating it my little dog looked like she wanted some. I figured it was too spicy and to stop her from imagining something she thought was tasty I offered her a piece of cucumber. She loved it, she wanted to keep eating it. I checked and it is fine for dogs. Since she has a congenital disease, I figured this might help. There are many videos on fermenting but honestly, I keep coming back to my Dear Friend Mary. Thanks for all you videos.

I have a bunch of cherry tomatoes from the garden. Gonna ferment them. I've tried a ferment recipe but I didn't do my research and it got yeast on top and I thought it went bad. It was probably gross anyways. It was a pineapple cabbage turmeric black pepper thing that is supposed to be super healthy. Probably is but sure sounds gross. Didn't take much to get me to toss it. I now have some of Katz books.

One more question regarding the salt measure that I'm sure some people as myself will be wondering. Is that measure of salt for that size jar (as well as all the other size jars) always the same regardless of what vegetable you ferment? Or does it vary depending on what vegetable you are fermenting. Seems a sill question but it's going through my head as someone about to do their first ferment. Oh and thank you for letting us know that you can still use tap water by boiling it and letting it stand overnight to let the chlorine out. This has always been the reason why I've never done any fermenting because my only option was tap water. I now have a Brita jug but I may consider buying in some distilled water and the celtic salts that I'd use would put back the vacant minerals in the distilled water.
