What I love about galletes is that they’re so much easier to make and form than a traditional pie and the crust is always flaky and delicious. Trust me you can’t mess this up even if you tried, so let’s make a gallete using summer fruits ☺️
Short crust pastry:
1 cup all purpose flour
1/4 tsp. Salt
1/2 cup cold butter (cubed)
2 tbs. Ice cold water
Makes two 14 inch/30 cm crust
I like using a food processor for making the crust but you can absolutely make it by hand. Place the flour, salt and butter in the bowl of a food processor and pulse until you see tiny grains forming, start adding the iced water while pulsing until it just comes together (no need to over process) form between your hands into 2 discs, wrap with a plastic wrap and keep in the fridge if your using within a week, if not freeze for 3 months in a ziplock bag
Your favorite Raspberry jam
4-5 plums sliced
4-5 figs sliced
Dollops of Brie cheese
Heavy cream for brushing the edges + Raw sugar
Crème fraîche whip:
1/2 cup crème fraîche
1/2 cup heavy cream + 2 tbs.
3 tbs. Honey
Whip everything together until forming soft peaks
Preheat oven to 375 F.
Roll out the crust to 14 inches it doesn’t have to be perfect, place on a parchment paper lined baking tray.
Spread your favorite raspberry jam leaving 1 inch to fold, arrange your cut up fruits in any manner you prefer dot with Brie cheese. Fold the crust over the edges of the fruit, brush the edges with heavy cream and sprinkle with raw sugar and a little bit over the fruits for extra measure.
Bake on the middle rack until golden on the edges about 20-25 minutes let cool before serving with crème fraîche whip
