Filipino Biko | Sticky Rice Cake
Sticky Rice Ingredients
Glutinous Rice - 3 cups
Coconut Milk - 1.5 cups
Water - 1.5 cups
Screwpine Leaves(Pandan)- 2 pcs
Syrup Ingredients
Coconut Milk - 3 cups
Sugarcane chunks(Panocha) - 2 chunks
In a medium pot, combine glutinous rice, coconut milk, water and screwpine leaves. Simmer until rice thickens, then turn off heat.
In a separate pot, combine sugarcane chunks and coconut milk. Cook while stirring constantly until mixture thickens.
Combine cooked sticky rice and half of the caramel syrup, and then transfer into a greased baking pan. Pour evenly the remaining caramel syrup on top of the sticky rice and bake in oven at 350F/180C for 20-25 minutes or until the syrup is reduced.
Remove from heat and set aside. Once cool, cut into squares and serve.
