My kids always ask for adobo whenever I ask them what they want me to cook. We have been using seasoned rice wine vinegar because they like that slight sweetness. One tip I learned back in the Philippines is once the vinegar is in with the meat, I don’t stir it and just let it cook down, while the chicken in getting more tender.

Sarap!! Nice Adobe recipe. My favorite is pork belly adobo, but usually make chicken thighs. A combo of both is good too. I will remember to make Adobo fried rice next time with my leftovers 🙌

My sister has made this and it was so good!!!! My nephews her boys who are half Hispanic half Filipino she always try’s to make them Filipino food so they can experience their culture through food since we can’t travel to the Philippines right now

Great commentary on the vinegar. There are a lot of people that are too scared of vinegar or don't know how to utilize it in Filipino cooking. Reducing the vinegar mellows it out more and using different types of vinegar is key to a good adobo. Pre-colonial native adobo was only cooked in vinegar after all before trade with China that brought soy sauce.

Made pork adobo with boiled egg. Woke up hungry, now at 3am I fried some leftover rice and poured the leftover adobo. Omgeeee, so comforting and so good 😋

I watched my mom make adobo and she never used soy sauce. She said she was making it the Ilocano way. I have never been able to make it her way.

I learned Adobo from my US Navy cooks we put celery, onions and Carrots into the rice along with scrambled eggs to garnish. I like slowly browning the rice with a light coating of olive oil before adding my liquid soy sauce and beef stock. Of course you can never have enough garlic in anything.

Oh my, no wonder Filipinos have major blood pressure problems. Looking at my family and the history of different regions of countries on medical problems. Japan has a higher diabetes problems due to a lot of sugar used, Philippines is high blood pressure because of salt used, etc.
