I catch and fillet my own fish Turbot is quite tricky to fillet when first caught ( SAME DAY ) so I recommend leaving in a fridge for a couple of days to relax the flesh as turbot in this video shows this is fresh but not same day caught

Nice fish. The thing though is that in many of these cross-filleting vids the head is on but the guts are already out, which makes this method easier. If the head is off completely there is a little less control of the fish, but if its on and the guts are in its likely to wind up a bit of a mess if youre not careful. If you catch your own flat fish and just pull off the heads and guts at sea you might wanna adapt your approach to that scenario.
