Ingredients for the Syrup
- 500g sugar
- 400ml water
- 1 cinnamon stick
- The peel of 1 orange
Ingredients for the Filling
- 80g walnuts
- 80g toasted almonds
- 80g toasted sesame seeds
- 50g raisins
- 300g Greek Macedonian halva
- 50ml honey
- Zest of 1 orange
- 1 1/2 tsp cinnamon
- 1/2 tsp nutmeg
- 12 sheets of Filo dough for baklava (or double if you make them smaller)
- 400ml olive oil
- 30ml rose water
Method
1. In a small pot, combine all the ingredients for the syrup and boil for 5 minutes from the point it starts boiling.
2. In a bowl, mix the nuts, halva, honey, cinnamon, nutmeg, and orange zest well.
3. Generously oil the baking dish. Lay a sheet of filo on the work surface and oil it well. Place 3 tbsp of filling on one side, leaving equal space on both sides so that when folded, the edges cover the filling evenly. Oil again and roll it up. Use the same technique for the rest of the filling.
4. Oil all the rolls on top and sprinkle with rose water or plain water.
5. Bake at 170°C for about 50 minutes in the bottom part of the oven until they are nicely aerated and browned.
6. While the rolls are hot, pour cold syrup over them and let them absorb the syrup for about 1 hour until ready.
