Once you have your smoker up to temp, how often do you find yourself needing to add wood? Maybe a small split every 45 minutes or so? Assuming you have a good coal base, can you go a couple of hours without adding wood. Thanks for your videos Good content

Great video! I cook with a 24x36 Shirley as well. You are spot on with this video! You just have to use your smoker and have fun with it! Once you get it figured out it is rock steady… look forward to next video!

Excellent fire management video. Sometimes people overthink it. I have a Shirley 24x36 and with no experience on stick burners, I was up and smoking, watching your videos from 2020. Keep up the good work my friend.

I just got my Shirley about a month ago, I did 2 cooks and what seems to be difficult for me is trying to get a some what consistent temp around 240. I cut my splits down pretty small like yours, some maybe even smaller to get a good clean fire. What seems to be happening is, if I don't add a certain amount of wood my coal base slowly dwindles down and then it gets more difficult to get the next log to catch, but when I add enough wood to keep the coal base the temps rocket up to 275 even with the damper on the door cracked to about 2 finger widths open. The pit seems to want to sing around 275. With all your cooks, have you had any issues running around 230-250 with a clean fire? I'm using seasoned oak wood. Sorry for the wall of text, great video and thank you for the content!

Hey scooby, appreciate the comment. I keep mine around 250 with no issues. I understand what you mean about the coal bed. Sometimes mine gets low also but never enough so that it won’t light another split. Sounds like your doing good just have fun and don’t try to overthink it.

I have a 24x36 and it runs at 250 pretty easy. It was a little tricky at first. I would encourage you to overshoot temp at initial warm up and then settle back down to desired temp. When I started doing that I found I had more consistent temps. Also when I started closing down to a little more than half way with an open exhaust, that I had more even temps through out the cook chamber. Now that I’ve cooked a lot on it I can get it where I want it and keep it. Always gonna be some fluctuation of temp on offset. Scott is telling you right! #1 rule have fun and you will have it dialed in!

@@fam_eats_4850 I wanted to give an update, now that I've been cooking for awhile, the coal base is absolutely most important. I wasn't adding enough wood in the beginning. I would shoot to about 300 in the beginning and then let the fire settle down around 250, no more issue! This smoker is just something out of this world. I was lucky enough to get it before the prices rocketed up. I cant believe they were selling these at $1975 at one point... that was basically stealing this thing! Also, your FB page is great, thanks for a great community.

Sir, can you run this pit on charcoal at 250-275? Like to have more capacity that my drum. Don’t like the heavy smoke taste. Charcoal and a few wood chunks is my favorite.

Hey Todd, I use a mitre saw. 10” or 12” saw will work. It’s not ideal but it works. Thanks for the comment
