Gotta love a great bowl of tomato soup with a grilled cheese sammich as we roll into the fall season... This one is hard to beat! Here's what I did:
12-14 vine ripened tomatoes
1 pint container of cherry tomatoes
1 medium white onion
1 bulb of garlic
about 2 cups of chicken stock
1 tablespoon of worcestershire sauce
1 to 2 teaspoons of kosher salt (to taste)
1 teaspoon dried oregano
1 teaspoon dried thyme
1 tablespoon of sugar, honey, or other sweetener
1/4 teaspoon cayenne pepper
1 ounce grated pecorino romano cheese
Olive oil for pan and drizzle
Heavy cream for garnish
Preheat your grill or oven to 400°F. Prep the tomatoes, onion, and garlic as shown in the video. Place those on the grill or in the oven for one hour. Remove, let cool for 15 minutes, and remove the skins from the vine ripened tomatoes. Reduce the grill or oven temp to 275-300°F. Place the tomatoes and onion in a blender. Squeeze the roasted garlic into the blender jar. Blend on high speed until smooth. Dump the contents of the blender into a dutch oven or other appropriate pan. Add 1 to 2 cups of chicken stock until the consistency is just slightly thin. Add a half teaspoon or so of salt, oregano, thyme, worcestershire sauce, sugar, cayenne pepper, and cheese and stir it in. Place back on the grill or in the oven for an hour to 90 minutes and let reduce to the consistency you like. Serve with a great grilled cheese sandwich and a drizzle of heavy cream....
